Wild Berry Flax Muffins

Mix all ingredients in order
- 1 1/2 cup white flour
- 3/4 cup flax meal
- 3/4 cup oat bran
- 1 cup sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup buttermilk
- 1 tsp vanilla
- 1 cup mixed berries, diced
Spaghetti Carbonara

Melt butter with olive oil in small saucepan
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 lb. bacon, cut into 1/2 inch pieces (or pancetta)
- 4 egg yokes
- 1/3 cup whipping cream
- 1/3 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- 1 lb. spaghetti
- Additional Parmesan cheese
Caramel Brownies

Mix first 3 ingredients together well
- 1 box German chocolate cake mix
- 3/4 cup margarine, melted
- 1/3 cup evaporated milk
- 1 6-ounce package milk chocolate chips
- 1 small package nuts, chopped
- 1 14-ounce package caramels
- 2/3 cup evaporated milk
- Powdered sugar
Cinnamon Vanilla Ice Cream

- 3 cups whipping cream
- 1 1/2 1 1/2 cups whole milk
- 2 vanilla beans, split lengthwise
- 1 cup plus 2 tablespoons sugar
- 6 large egg yolks
- 2 1/2 2 1/2 teaspoons ground cinnamon
- 8 cinnamon sticks (optional)
Lasagna

Heat heavy stock pot over medium high and and meat
- 1/4 cup oil
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1 lb. hamburger
- 1 can (2 lb. 3 oz) Italian tomatoes
- 2 small cans tomato paste
- 2 Tblsp sugar
- 1 Tblsp salt
- 2 Tblsp parsley (dried)
- 2 tsp oregano
- 1 tsp. basil
- 1 package lasagne noodles
- 1 lb. shredded mozerella
- 1 lb. cottage cheese
- 8 oz. grated parmesan cheese

Grandma Moody's recipe
- 1 cup sugar
- 1 cup powdered sugar
- 1/4 tsp salt
- 1 cup margerine, softened
- 2 eggs
- 1 cup canola oil (or other flavorless oil)
- 2 tsp vanilla
- 5 cups flour
- 1 tsp baking soda
- 1 tsp cream of tartar
Lime Curd

Remove the zest from the limes with carrot peeler, being careful to avoid white pith
- 4 limes at room temperature
- 1 1/2 1 1/2 cups sugar
- 1/4 pound unsalted butter at room temperature
- 4 extra-large eggs at room temperature
- 1/8 teaspoon kosher salt
GF Vanilla Cupcakes with Strawberry Icing

Heat oven to 350. Measure all ingredients into a bowl
- 2 cups GF flour
- 2 tsp xanthan gum (don’t skip!)
- 1 1/2 cups sugar
- 1 tsp salt
- 3 1/2 tsp baking powder
- 1/2 cup shortening (CF margarine also works, may produce a slightly more ‘yellow’ cupcake)
- 1 cup GFCF milk (we used vanilla almond milk – yum!)
- 1 tsp GFCF vanilla
- 3 eggs
- Frosting
- 2 cups powdered sugar
- 1/4 cup CF margarine
- 1 tsp vanilla
- splash of milk (sub)
- 3-4 frozen strawberries, heated in microwave about 40 seconds & then mash
Vodka Sauce

In large skillet or sauce pot over medium heat, saute olive oil, onion and garlic until softened but not brown
- 1/4 cup olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 large can (28 oz) crushed tomatoes
- 1 tsp basil
- 1/4 - 1/2 tsp red pepper flakes
- 1/4 cup vodka
- 1 cup half and half (you can use fat free)
Peanut Brittle

Combine first 5 ingredients in a heavy stockpot with high sides
- 2 cups sugar
- 1 cup white Karo syrup
- 1/2 cup water
- 1 Tblsp margerine
- pinch of salt
- 2 tsp baking soda
- 2 cups RAW peanuts (cashews are great too)
