- 1/4 * 1/4 cup lime juice
- 1/4 * 1/4 cup reduced-sodium soy sauce
- 1 * 1 tablespoon canola oil
- 1 * 1 teaspoon chili powder
- 1 * 1 pound chicken tenders
- 2 * 2 cups loosely packed fresh cilantro leaves, (1-2 bunches)
- 2 * 2 scallions, sliced
- 2 * 2 tablespoons toasted sesame seeds, (see Ingredient Note)

1. Pound and salt and pepper chicken
- 1/4 Cup Margarine
- 1 Cup Chopped Onion
- 1 Clove garlic
- 3 Boneless chicken breasts
- Salt and Pepper
- 16-24oz Can tomato sauce
- 1/4-1/3 Cup red wine
- 1 Tbs dried basil or heaping handful of fresh basil
- 2 Tbs Parsely
- 1 lb Frozen shrimp

- 12 oz al fresco Roasted Pepper and Asiago Chicken Sausage sliced on diagonal 1/4 inch thick
- 3 cups low sodium chicken broth
- 2 Tbsp butter
- 1 (14oz) can pumpkin puree
- 1 cup yellow corn meal
- 1/2 ½ cup shredded Asiago cheese
- 1/2 ½ tsp each salt and pepper
- 1 Tbsp olive oil
- 1 medium onion, chopped
- 1 cup diced tomatoes
- 1 (14oz) can black beans, rinsed and drained
- 1 Large handful of fresh cilantro

- 3 Large Chicken cutlets, sliced thin and pounded
- 3 oz flour
- Salt and pepper
- 4 oz butter
- 3/4 lb mozzarella cheese
- 6 oz proscuitto
- Brown Sauce
- 3 Tbs Butter
- 4 Tbs Flour
- 1 1/2 cups chicken boullion
- 1 1/2 cups beef boullion
- 1/2 Sherry or maderia wine
- 1/4 tsp caramel coloring
Tilapia with Olives

- 1 small onion, diced
- 1 Tbs fresh oregano
- 1/4 cup coarsely chopped pitted kalamata olives
- 2 Tbs dry white wine

CA Pizza Kitchen Chicken (or shrimp) Tequila Fettuccine

1. Pour soy sauce over chicken or shrimp
- 1 lb Spinach Fettuccine
- 1/2 c chopped cilantro
- 2 tbs minced garlic
- 2 tbs minced jalapeno pepper
- 3 tbs unsalted butter
- 1/2 c chicken stock
- 2 tbs gold tequila
- 2 tbs lime juice
- 3 tbs soy sauce
- 1.25 lbs chicken breast or shrimp
- 1/4 medium red onion, thinly sliced
- 1/2 red pepper, thinly sliced
- 1/2 yellow pepper, thinly sliced
- 1/2 green pepper, thinly sliced
- 1.5 cups fat free half and half (or heavy cream)
Chili Marinated Shrimp with Avocado Sauce

- 1 lb 5oz large shrimp
- 1/2 tsp ground cumin
- 1/2 tsp mild chili powder
- 1/2 tsp paprika
- 2 tbs orange juice
- grated rind of 1 orange
- 2 tbs olive oil
- 2 tbs chopped fresh cilantro, plus extra for garnish
- 1 ripe avacado
- 1/2 onion, finely chopped
- 1/4 fresh green or red chili, chopped
- juice of 1/2 lime
- salt and pepper
Sweet Potato Fries

- 2 * 2 pounds sweet potatoes
- 1 * 1 tablespoon canola oil
- 1 * 1 teaspoon pumpkin pie spice
- 1 * 1 tablespoon low-sodium chili seasoning

- 2 cans Ortega Enchilada sauce per aluminum tray
- 8 oz shredded cheddar or monterey jack per tray
- Medium flour tortillas
- Yellow spanish rice
- 1 bag frozen roasted corn (Trader Joes)
- 2 peppers diced
- 1 med red onion, diced
- 1 jalapeno, chopped finely
- Chopped Garlic to taste
Spiced Pumpkin Bread

- 2.5 cups sugar
- 3/4 cup vegetable oil
- 3 eggs
- 3/4 large can of pumpkin
- 3 cups whole wheat flour
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ginger
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- Note: cut sugar from 3 cups to 2.5 and oil from 1 cup to 3/4 cup.
