Curried Lentil Soup

Heat oil in a heavy stockpot over medium heat
- 1 tsp canola oil
- 1 large onion,chopped
- 3 cloves garlic,minced
- 2 tablespoons minced fresh ginger
- 1 jalapeño pepper, seeded and minced
- 1 1/2 tablespoons curry powder
- 1 teaspoons cinnamon
- 1 teaspoon ground cumin
- 2 bay leaves
- 1 1/2 cups lentils
- 8 cups reduced-sodium chicken broth
- 3 tablespoons chopped fresh cilantro, or parsley
- 2 tablespoons lemon juice
- Salt & freshly ground pepper, to taste
- 1/3 cup plain nonfat yogurt or sour cream

- 4 cups reduced-sodium chicken broth
- 1 1/2 pounds butternut squash, (1 small to medium), peeled, seeded and cut into 1-inch cubes
- 2 tablespoons minced fresh thyme, or 2 teaspoons dried thyme
- 1 1/2 teaspoons ground cumin
- 1 pound chicken cutlets, cut into 1/2-by-2-inch strips
- 2 cups frozen corn kernels
- 2 tablespoons lime juice
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
Sesame Snow Peas

Bring a large pot of salted water to a boil
- 1 * 1 pound fresh snow peas, trimmed
- 2 * 2 teaspoons peanut or vegetable oil
- 1 * 1 teaspoon toasted sesame oil
- 1/4 * 1/4 cup diagonally sliced green onions (white parts only)
- 2 * 2 teaspoons minced garlic
- 1 * 1 teaspoon minced fresh ginger
- 1/4 * 1/4 teaspoon hot pepper flakes, or to taste
- 1 * 1 tablespoon black sesame seeds
Ginger Pumpkin Soup

- 3 cans (14 1/2 oz each) chicken broth
- 1 can (11 1/2 oz) pear nectar
- 1/3 cup creamy peanut butter
- 2 cloves garlic finely chopped
- 2 tbs grated fresh ginger
- 2 tbs finely chopped scallions
- 1 tbs lime juice
- 1/2 tsp salt
- 1/4 tsp ground cayenne pepper
- Toasted pumpkin seeds (optional)
