Grilled Vegetables with Quinoa and Yogurt Sauce

1. Slice vegetables and toss them in olive oil, salt and pepper
- Vegetables
- 2 bell peppers, stemmed, seeded and quartered
- 1 lb yellow squash or zuchinni, sliced
- 8 ounces mushrooms,
- 8 ounces portabella mushrooms
- 2 large red onions sliced
- 1.5 tbls olive oil
- Kosher salt and freshly ground pepper
- 1 cup quinoa
- Sauce
- 1/4 cup plain Greek yogurt
- 1/4 cup light sour cream
- Garlic Powder
- Onion Powder
- Salt and pepper to taste
- Fresh Cilantro
- 1/4 cup sliced almonds, toasted

Ancho Chile Soup

Flavorful mexican soup made from dried ancho chiles
- Garnish:
- 2 Seeded soaked ancho Chiles
- 1 Onion
- 1 Can diced tomatoes
- 2 Garlic cloves
- 1/2 Tbs olive oil
- 6 Cups chicken broth
- 2 Shredded chicken breasts
- 1/2 Cup cilantro
- 1/2 Cup corn
- Tortilla chips
- Avacado
- Cilantro
- Lime Juice
Black Bean Soup

1. Pour dry beans on papertowel and remove any rocks
- Garnish:
- 2 Large Spanish Onions
- 2 Jalapenos
- 2 Clove Garlic
- 1 16oz Bag Black Beans
- 6 Cups Water
- 2 Knorr chicken boullion cubes
- 2 tsp Cumin
- 2 tsp Coriander
- Fresh Cilantro
- Minced red onion
- Sour cream
- Rice
Curried Carrot Soup

Preheat medium pot over medium high heat
- 1 tablespoon light butter
- 1 medium onion, chopped
- 1 1/2 lbs carrots
- 6 cups chicken stock, available on soup aisle
- 2-3 teaspoons curry
- 1/4 to 1/2 teaspoon ground cayenne pepper
- Light sour cream
- Fresh chives/scallions/cilantro for garnish
- Plastic squeeze bottle needed if you are going to make web design. Otherwise, just doll-up a tablespoon of sour cream on top.
Chicken Divan

- 1 Pound Chicken breast
- 1 Tablespoon Butter or Margarine
- 1 Cup Milk
- 3/4 Cup Water
- 1 Package Broccoli (10oz frozen) or can use fresh
- 1/2 Pound Mushrooms
- 1 Chicken boullion cube
- 1 1/2 Cup Dry minute rice
- 1/2 Cup Mayonnaise
- 3/4 Cup Swiss Cheese
Thai Chicken Soup

Made more than 5 1 1/2 cup servings
- Non Stick Canola Oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tsp red or green curry paste
- 6 cups low-sodium chicken broth
- 1 15-ounce can lite coconut milk
- 1/2 tbs fish sauce, 1/2 tbs soy sauce
- 2 red bell peppers, thinly sliced
- 4 ounces thin rice noodles, broken into pieces
- 9 oz skinless, boneless chicken breasts (sliced thinly and crosswise)
- 1 tablespoon fresh lime juice, plus more to taste
- 1 lb chopped fresh spinach
- Garnish
- roughly chopped fresh cilantro
- chopped scallions
Chicken Tandoori

Toss the chicken with the lemon juice and 1 1/2 teaspoons salt in a large bowl
- 2 lbs chicken cutlet
- Juice of 1 lemon
- Kosher salt
- 1/2 cup plus 2 tablespoons plain yogurt
- 1 tablespoon vegetable oil
- 1/2 small red onion, roughly chopped
- 3 cloves garlic, smashed
- 1 2-inch piece ginger, peeled and roughly chopped
- 4 teaspoons tomato paste
- 2 teaspoons ground coriander
- 1 1/2 teaspoons ground cumin
- 1 3/4 teaspoons hot paprika
- 2 tablespoons chopped fresh cilantro
- Cooked rice, for serving (optional)
French Onion Soup

- 2 Large onions
- 1 Small garlic clove
- 1 Tbs butter or margarine
- 2 Tbs flour
- 5 Cups beef boullion
- 2 Knorr Beef boullion cubes
- 2 Tbs sherry
- Loaf french bread sliced
- Mozzerella Cheese, fontina, swiss (can mix)

Roasted Butternut Squash Soup and Curry Condiments

Preheat the oven to 425 degrees F
- Condiments for serving:
- 3 to 4 * 3 to 4 pounds butternut squash, peeled and seeded
- 2 * 2 yellow onions
- 2 * 2 McIntosh apples, peeled and cored
- 3 * 3 tablespoons good olive oil
- * Kosher salt and freshly ground black pepper
- 2 to 4 * 2 to 4 cups chicken stock, preferably homemade
