Thai "Chicken" and Veggies

Heat oil in a large wok or frying pan
- 2 to 3 tbsp olive oil
- 2 medium onions
- 1 large or 2 medium peppers, either bell or red
- 1 to 2 tsp grated fresh ginger, if available
- 1 (16 ounce) can coconut milk (I use "lite")
- 3 tbsp Thai-style red curry sauce
- 1 cup textured soy protein chunks (rehydrated with 1 cup boiling water)
- 2 to 3 tbsp dry-roasted peanuts, if available
- Fresh chopped cilantro, optional
- Vietnamese-style hot chili sauce, optional
Pumpkin Pie Squares

- Filling:
- 1 (15-ounce) can pumpkin
- 1 (12-ounce) can low-fat evaporated milk
- 2 eggs
- 3/4 cup granulated sugar
- 1/2 tsp salt

- 1/4 tsp ground cloves
- Crust:
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup packed dark brown sugar

- Topping:
- 1/2 cup chopped pecans
- 1/2 cup packed dark brown sugar
- 2 tbsp butter
- Whipped cream, optional
Southwestern Corn and Roasted Red Pepper Soup

Note: Dried chilies that are not properly reconstituted impart a bitter taste to slow cooker recipes
- 1 dried New Mexico chili (optional) (see note)
- 1 cup boiling water
- 1 large onion, diced
- 6 cloves garlic, minced
- 1 tablespoon cumin seed
- 1 tablespoon chopped rosemary, dried or fresh
- 1 bay leaf

- 4 cups corn kernels, thawed if frozen
- 6 cups vegetable stock
- 2 red bell peppers, roasted and cut into 1/2-inch cubes
- 2 cups whipping cream
- Finely chopped parsley or cilantro
Nutmeg Cookies

- 1 tsp soda
- 1 tsp nutmeg
- 1/2 tsp vanilla
- 1 1/2 cups sugar
- 1 cup shortening

- 1/2 tsp almond extract or lemon extract
Sesame Noodles with Scallions and Radishes

- 3/4 lb dried linguine
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1 Tbsp chopped fresh ginger
- 1/2 tsp minced garlic

- 2 Tbsp Asian sesame oil
- 1 Tbsp honey

Concord Grape Salad Dressing

- 2 tablespoons lemon juice
