Spicy White Chili

In a 3 quart saucepan, sauté onions in oil until tender
- 2 medium onions, chopped
- 1 tbsp. oil
- 4 garlic cloves, minced
- 2 cans (4oz) each) chopped green chilies
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 ground cloves
- 2 cans (14 1/2 oz. each) chicken broth
- 4 cups cubed cooked chicken
- 3 cans (15 1/2 oz each) great northern beans, rinsed and drained
Mama Peg's Potato Salad

Mix all ingredients in a large bowl then set in refridgerator
- 6 red potatoes-boil
- 2 hard boil eggs-smashed
- 1 celery stalk-cut
- onions-chopped
- salt and pepper
- 1 tbsp. of rice vinegar
- Helmann's mayo (3 tbsp. then add more if needed)

Lemon Basil Chicken with Goat Cheese, Spinach and Artichokes

- 4 chicken breasts
- 2 tbsp. olive oil
- 4 oz. goat cheese
- 4 cups spinach
- 2 pieces water packed artichoke hearts
- 1/2 cup white wine
- 1/2 cup chicken broth
- 3 tbsp. fresh lemon juice
- 1 tsp. lemon rind
- 5 garlic cloves
- 1 tsp. flour (gluten free)
- 1 dash salt and pepper

- 2 tablespoons Coconut Oil
- 1 boneless, skinless chicken cutlet, cooked (and cut into two pieces)
- 2 slices of tomato
- 1/2 cup fresh spinach leaves

- 3 tablespoons guacomole
