A moist banana bread infused with carrot cake tendencies
- 1 1/4 C all-purpose flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp ground cinnamon
- 2 large eggs, room temperature
- 1/4 C vegetable oil
- 1 tsp vanilla extract
- 1 C granulated sugar
- 1 C mashed bananas
- 1 1/2 C finely grated carrots, packed
- 1/3 C finely chopped walnuts or pecans
- Cream Cheese Frosting -
- 4 oz cream cheese, room temperature
- 4 oz butter, softened
- 2 C powdered sugar
- 1/4 chopped walnuts or pecans for garnish
Pumpkin Cream Cheese Brookie Sandwich

- 1 tsp vanilla extract
- 5 tbsp unsalted butter, room temperature

- 1 C mini chocolate chips
- For the filling -
- 8 oz cream cheese, softened
- 1/4 C pureed pumpkin
- 1/4 C light brown sugar
- 1/8 C granulated sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla
