- 16 ounces cream cheese, room temperature
- 1 1/2 sticks unsalted butter, room temperature
- 4 C powdered sugar
- 1 tsp vanilla extract
Carrot Cake Cookie Sandwiches with Cream Cheese Filling

- Cookie
- 1 1/4 C all-purpose flour
- 1/2 C quick oats
- 3/4 tsp baking soda
- 1 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 C unsalted butter, room temperature
- 1/2 C granulated sugar
- 1/2 C light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 C finely grated carrots
- 3/4 C chopped walnuts or pecans
- Filling-
- 4 oz cream cheese, softened
- 6 tbsp unsalted butter, softened

- 1/2 tsp vanilla extract
- 1 + C powdered sugar
S'mores Cookies

- 3/4 stick unsalted butter, room temperature
- 6 tbsp brown sugar
- 2 tbsp granulated sugar
- 1/2 an egg
- 1 tsp vanilla extract
- 3/4 C + 2 tbsp all-purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- pinch salt
- 1/2 C graham crackers (about 3 sheets), roughly chopped
- 1 C mini semi-sweet chocolate chips
- 2/3 C Jet-Puffed Mallow Bits
Cinnamon Sugar Pumpkin Bites

- 1 + 3/4 C all-purpose flour
- 1 + 1/2 tsp baking powder
- 1/2 tsp salt

- 1/2 stick (1/4 C) unsalted butter, melted
- 1/2 C dark brown sugar

- 2 boneless skinless chicken breasts
- 1 small onion, chopped
- 1 (28 oz) can diced tomatoes
- 1 (16 oz) can tomato sauce
- 1 (4.5 oz) can chopped chilies, drained
- 1 (15 oz) can chickpeas, undrained
- 1 (15.5 oz) can black beans, undrained
- 1 (15.5 oz) can small red beans, undrained
- 2 tbsp chili powder
White Chocolate Cinnamon Pretzels

Mediterranean Fish Tacos

Pico de Gallo

- 3 large tomatoes
- 1 medium sized onion
- 1/4 bunch of cilantro (or more, because it's amazing!)
- juice of 1 lime
- 1 tsp garlic, minced
- 1 tsp of salt
- 1 jalapeno
Dulce de Leche Tarts

A sweet caramel and dark chocolate filled tart
- 2 Refrigerated Pie Crusts
- 1 can (13.4 oz) Dulce de Leche**
- 1/2 C Heavy Cream or Whole Milk
- 1 C (6 oz) Dark Chocolate Chips
- Flaky sea salt for sprinkling (optional)
- Note: You can find the Dulce de Leche down the hispanic aisle at your grocery store. It's made by Nestle.
Holiday Pretzel Sticks
