- For the cookies
- 2 C light brown sugar, packed
- 1 C vegetable oil
- 1 + 1/2 C pumpkin puree
- 2 large eggs
- 3 C all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 1/2 tbsp cinnamon
- For the filling
- 12 tbsp (1 + 1/2 sticks) butter, room temperature
- 1 + 1/2 tsp vanilla extract
- 3 tbsp heavy cream or milk
- 3 C powdered sugar
Soft & Chewy Chocolate Chip Cookies

- 2 + 1/4 C all-purpose flour
- 1 tsp baking soda
- 1 + 1/2 tsp cornstarch
- 1/2 tsp salt
- 3/4 C unsalted butter, melted

- 1/2 C granulated sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 1 C chocolate chips
Cauliflower Pizza Crust

- Dark Chocolate Buttercream -
- 5 + 1/2 C powdered sugar
- 1 + 1/3 C unsweetened cocoa powder
- 12 tbsp butter, room temperature
- 12 tbsp heavy cream or whole milk
- 2 tsp vanilla
Holiday Chocolate Covered Pretzels

- 1 lb chocolate almond bark
- 1 lb white chocolate (vanilla) almond bark
- 1 large bag of mini twists pretzels
- 1/2 pkg Andes Mint pieces
- 1/2 pkg Peppermint Crunch pieces
Red Velvet Cake with Cream Cheese Frosting

A classic red velvet cake with a smooth cream cheese frosting
- Cake:
- 2 1/2 C all purpose flour
- 1 3/4 C granulated sugar
- 2 tbsp cocoa powder
- 1 tsp baking soda
- 2 eggs
- 1 1/2 C vegetable oil
- 1 C buttermilk
- 1 tbsp vinegar
- 1 tsp vanilla extract
- 3 tbsp milk
- 1 tbsp red gel food coloring (maybe more or less depending on desired color)
- Cream Cheese Frosting:
- 16 ounces cream cheese, room temperature
- 1 1/2 sticks unsalted butter, room temperature
- 4 C powdered sugar
- 1 tsp vanilla extract

- 1 pkg Refrigerated Pie Crusts
- 1/2 C light brown sugar, packed
- 1 + 1/2 tsp cornstarch
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 3/4 C canned pumpkin
- 2 large eggs
- 3/4 C whole milk
Jack 'O Lantern Stuffed Bell Peppers

1. Cook the quinoa as directed on the box, using 1/2 C quinoa and 1 C water
- 3 orange bell peppers
- 2 boneless skinless chicken breasts
- 1/4 C water, for chicken
- 1/2 tomato, diced
- 1/2 red onion, diced
- 2 cloves of garlic, minced
- 1 tsp chili powder
- 2 tbsp Sriracha chili garlic sauce
- 1/2 C of quinoa
- 1 C of water, for quinoa
- A dash of salt and pepper to taste

- 2 tbsp sugar
- 3 tbsp canned pumpkin
- 2 tsp flour
- 1/4 tsp cinnamon
