Crockpot Italian Beef

Place roast in your crock pot and drizzle the juice of the peppers over the top and down the sides
- 3 to 3/12 pound eye of round roast
- 1 16 oz jar peperoncini
- 1 envelope Good Seasons zesty Italian salad dressing mix
Balsamic Glazed Pork Tenderloin for Crockpot

This is an awesome dinner
- 2 pork tenderloins (about 3lbs total)
- 2 tsp ground sage
- 1 tsp salt
- 3 cloves garlic, pressed
- 1/2 tsp ground black pepper
- 1 cup water, divided
- 1/2 cup brown sugar
- 1 Tbsp corn starch
- 1/4 cup balsamic vinegar
- 2 Tbsp soy sauce
- For the Tomato Salad
- 2 pints cherry tomatoes, halved
- 1/2 red onion, sliced in strips
- 2 Tbsp fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup brown sugar
- 2 teaspoon corn starch
- 2 Tbsp balsamic vinegar
- 1/4 cup water
- 1 Tbsp soy sauce
- 1/2 cup olive oil
Ricotta Meatballs

Freeze leftover meatballs up to 1 month
- For the Meatballs:
- 1 large yellow onion, finely chopped (1 cup)
- 1/4 cup minced garlic (about 2 heads)
- 3 tablespoons olive oil
- 2 eggs, lightly beaten
- 2 1/2 pounds 80% lean ground beef
- 1 cup grated Grana Padano cheese (2 ounces)
- 1 15 ounce carton whole milk ricotta cheese
- 1 cup panko bread crumbs
- 1/2 cup chopped fresh flat-leaf Italian parsley
- 1/2 cup chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Fresh Tomato Marinara Sauce
- Shaved Grana Padano cheese (optional)
- For the Marinara Sauce
- 2 ounces pancetta, chopped (optional)

- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 2 pounds fresh roma tomatoes, peeled, seeded, and chopped (about 3 cups), or one 28-ounce can whole peeled roma tomatoes, drained and chopped
- 1/2 cup dry red wine
- 1 - 2 teaspoons balsamic vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup snipped fresh basil
Easy Chicken Pineapple Kabobs

Preheat an outdoor grill for medium-high heat and lightly oil the grate
- 1 green bell pepper, cut into 1-inch pieces
- 1/2 onion, cut into 1-inch pieces
- 1/2 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
- 1 (15 ounce) can pineapple chunks, drained
- 1/4 cup barbeque sauce, or as needed
- 6 skewers
