Old Fashioned Homestyle Chicken and Noodles

Place chicken in a large stockpot and add water to cover
- 1 (4-5 pound) whole hen or chicken
- 2 stalks of celery with leaves
- 1 medium onion, cut into large chunks
- 2 carrots, cut into large chunks
- 2 teaspoons of salt
- 1/2 cup of chopped onion
- 1/3 cup of chopped carrot
- 1/3 cup of chopped celery
- 2 tablespoons Better than Bouillon Chicken Base
- Fresh cracked pepper, to taste
- Dash of poultry seasoning
- 1/2 teaspoon of dried thyme, crushed
- 8 ounce package of fresh mushrooms, sliced
- Homemade noodles (recipe below) or 1 (24-ounce)
- package of Reames or Grandma's frozen egg noodles
- 1 can of evaporated milk
- 2 tablespoons of cornstarch

In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes
- 8 ounces bacon, chopped
- 1/4 cup good olive oil
- 6 cups chopped yellow onions (4 large onions)
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup flour
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon ground turmeric
- 12 cups chicken stock
- 6 cups medium-diced white boiling potatoes, unpeeled (2 pounds)
- 10 cups corn kernels, fresh (10 ears) or frozen (3 pounds)
- 2 cups half-and-half
- 1/2 pound sharp white cheddar cheese, grated
Waldorf Salad, Best Ever

In a large bowl, sprinkle apples with 1 tablespoon lemon juice
- 4 medium golden delicious apples, cored and diced (4 cups)
- 1 tablespoon lemon juice
- 1 ⁄2 cup celery, chopped
- 1 ⁄2 cup halved green seedless grape
- 1 ⁄2 cup chopped walnuts
- 1 ⁄4 cup raisins
- 1 ⁄2 cup mayonnaise
- 1 1⁄2 tablespoons sugar
- 1 ⁄2 teaspoon lemon juice
- 1 ⁄2 cup whipping cream
- ground nutmeg (to garnish)
Hoisin Pork Tenderloin

1. Rub pork with 1 T. olive oil
- 2 boneless pork tenderloins, about 3 pounds
- 1 T. olive oil
- 1 t. kosher salt
- 2 T. Asian seasoning (such as McCormick Perfect Pinch Asian Seasoning)
- 2 T. olive oil
- 1 red onion, cut into 8 wedges
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 cup hoisin sauce
- 1/4 cup rice vinegar
- 2 T. Asian hot chile sauce (such as Sriracha)
- 2 T. dark sesame oil
Chicken Breast Surprise

1. Using a sharp knife, cut a pocket in the side of each chicken breast half
- 4 large skinless, boneless chicken breast halves (about 1 1/3 pounds)
- 1 cup shredded smoked Rofumo cheese or smoked Gouda, Edam or cheddar cheese (4 ounces)
- 1/2 cup all-purpose flour
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 eggs, slightly beaten
- 3/4 cup fine dry bread crumbs
- 1 tablespoon peanut oil or other cooking oil
Grilled Sugar Steak

- 3 T. Kosher salt
- 4 (9 - 11 ounce) boneless strip steaks, 1 inch thick, trimmed

n a large stockpot or Dutch oven, melt butter over medium-high heat
- 1/4 cup butter
- 2 onions, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 (32-ounce) cartons chicken broth
- 2 (15.5-ounce) cans great Northern beans, rinsed and drained
- 4 (4.5-ounce) cans diced green chiles
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 2 teaspoons dried crushed oregano
- 1 teaspoon garlic salt
- 4 cups shredded mozzarella cheese
- 2 cups heavy whipping cream
- 4 cups shredded Slow-Cooker Turkey (recipe follows)
- Garnish: fresh cilantro leaves, sliced red onion
Chicken Parmesan with Pepperoni

1. Preheat oven to 450 degrees
- 2 large eggs
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 2 cups panko breacd crumbs, finely crushed in a food processor
- 4 (8 ounce) boneless chicken breast halves, pounded 3/4 inch thick
- salt and freshly ground pepper
- 3/4 cup canola oil
- 1 1/2 cups tomato sauce
- 1/4 cup freshly grated Parmesan cheese
- 1 cup shredded mozzarella
- 2 ounces sliced pepperoni
- 2 T. chopped flat leaf parsley
