All the goodness of the famous Chicken Club sandwich all rolled up in a soft flour tortilla
- 1 1/2 cups cooked, small diced chicken (I used traditional-flavored rotisserie)
- 8 slices thick-cut bacon, crisply cooked and crumbled
- 1 large tomato, seeded and small diced
- 2 cups bite-size pieces iceberg lettuce
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup mayonnaise, or to taste
- 6 (8-inch) flour tortillas

This was the ideal meal in the 60's! It's delicious, cheap to make, and makes enough to feed a hungry family
- 1 (8-ounce) package elbow macaroni
- 1 (14.5-ounce) can Hunt's petite-diced tomatoes, undrained
- 1 (14.5-ounce) can Hunt's whole tomatoes, undrained (broken up slightly with a spoon, if desired)
- 2 tablespoons margarine
- Salt and black pepper, to taste
- Dash creole seasoning (like Tony Chachere's), optional
- Dash garlic salt, optional

- 1 box Spice cake mix
- 1/2 cup (1-stick) butter, softened (I used salted)
- 1 egg

- 1/3 cup water
- 1 cup sweetened flaked coconut
- 1 stick (1/2-cup unsalted butter, softened
- 1/2 cup sugar
- 1/3 cup light brown sugar, firmly packed
- 2 tablespoons sweet orange marmalade or apricot jam
- 2 extra-large eggs
- Scant 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
- Half of a small ripe banana, coarsely mashed (about 1/4-cup)
- 1 cup pecan halves (I used Elliotts)
- White corn syrup for brushing top (optional)

- CAKE:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 cups sugar
- 4 eggs (I used 3 jumbos)
- 1 1/2 cups vegetable oil (I used Crisco)
- 3 cups grated carrots
- 1 cup chopped pecans, optional

- 2 (8-ounce) packages cream cheese, softened
- 1 stick salted butter, softened, 1/2 cup
- 1 (16-ounce) box confectioners sugar
