OVEN ROASTED TOMATOES

This is a great basic to always have on hand! Instead of spending money on expensive, oil-packed sun-dried tomatoes...
- 3 pounds plum (Roma) tomatoes
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 t basil, dried
- 2 t Chef Meg's Italian Seasoning
- 1/2 t black pepper, cracked
CARROT CAKE

- FROSTING:
- 2 cups sugar
- 1 cup oil
- 4 eggs
- 2-1/4 cups flour
- 2 teaspoons baking powder
- 1 cup chopped nuts
- 1-1/2 teaspoons soda
- Sprinkle of salt
- 2 teaspoons cinnamon
- 1 small can crushed pineapple
- 2 cups grated and drained carrots
- 3 ounces cream cheese, softened
- 1-1/2 cups powdered sugar
- 3 tablespoons butter, softened
- 1 teaspoon vanilla
FROZEN LIMONADA

- 1/2 C water
- 2 limes, peeled
- 2 Tbsp granulated sugar or other sweetener

CHOCOLATE BUTTERMILK CAKE

Preheat oven to 350 degrees
- FROSTING:
- 1 cup (2 sticks) butter or margarine
- 2-1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups flour
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 1 cup (2 sticks) butter
- 1 cup (6 ounce bag) semisweet chocolate chips
- 3/4 cup buttermilk
- 4-1/4 cups powdered sugar
Chicken, Cashew, and Red Pepper Stir-Fry

This dish balances salty, sweet, tangy, and spicy ingredients
- 3 3/4 teaspoons cornstarch, divided
- 2 tablespoons low-sodium soy sauce, divided
- 2 teaspoons dry sherry
- 1 teaspoon rice wine vinegar
- 3/4 teaspoon sugar
- 1/2 teaspoon hot pepper sauce (such as Tabasco)
- 1 pound chicken breast tenders, cut lengthwise into thin strips
- 1/2 cup coarsely chopped unsalted cashews
- 2 tablespoons canola oil
- 2 cups julienne-cut red bell pepper (about 1 large)
- 1 teaspoon minced garlic
- 1/2 teaspoon minced peeled fresh ginger
- 3 tablespoons thinly sliced green onions

- 1/2 cup whipping cream
- 4 eggs
- 1/2 cup sugar
- 1/4 cup flour
- 1 cup Cool Whip topping, thawed
CROCKPOT CHOCOLATE CANDIES

Yummy candy from the crock pot? Doesn't get much better than that! It's never been easier to indulge your sweet too...
- 1 16 oz. jar dry roasted, unsalted peanuts
- 1 16 oz. jar dry roasted, salted peanuts
- 1 12 oz. package semi-sweet chocolate chips
- 1 bar (4 ozs.) sweetened german chocolate (green packaging), broken into pieces
- 3 lbs. (two 24 oz. pkgs.) white almond bark, broken into pieces [there are several different brands, you'll just have to use the brand found in your area. manufacturer's have lowered the ounces in some packaging, so use the equivlaent of 3 lbs.
- (some packages of almond bark may have candy coating on the package)
CASHEW CHICKEN SALAD SANDWICH

This sandwich goes together as fast as an ordinary turkey sandwich but is much more interesting
- 1/4 cup fat-free sour cream
- 1 tablespoon light mayonnaise
- 1/4 teaspoon curry powder
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
- 1/3 cup chopped celery
- 2 tablespoons chopped dry-roasted cashews
- 1 tablespoon finely chopped green onions
- 2 (2-ounce) whole wheat hamburger buns
DORIS’ CHOCOLATE FUDGE FROSTING

WONDERFUL, almost like a real fudge
- ADD:
- 1/2 cup Carnation evaporated milk
- 1 cup granulated sugar
- Boil the above ingredients for five minutes.
- 1/2 cup chocolate chips
- 6 large marshmallows
EASY CAULIFLOWER AND BROCCOLI AU GRATIN

Place cauliflower and broccoli in 2 quart microwave dish
- 1 LB large cauliflower florets
- 1 lb. large broccoli florets
- 1/2 cup water
- 4 oz. (1/2 of 8 oz pkg) Philadelphia Cream Cheese, cubed.
- 1/4 cup milk
- 1/2 cup Breakstone's sour cream
- 1-1/2 cups shredded sharp cheddar cheese
- 10 Ritz crackers, crushed
- 3 tablespoons grated parmesan cheese
