THE FIVE CHOCOLATES CHOCOLATE CAKE

If you don’t want to do the three different icings you can pick one and just use that one
- CHOCOLATE CAKE:
- 1 pound (2 cups plus 2 1/2 tablespoons) sugar
- 3 ounces (1 cup) good unsweetened cocoa powder
- 6 ounces (1 1/4 cup) bread flour
- 7 ounces (1 1/2 cup plus 1 tablespoon) cake flour
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 5 eggs
- 1 1/2 cup buttermilk
- 1 cup sour cream
- 1 teaspoon vanilla
- 1/2 cup freshly brewed strong coffee
- 10 ounces (2 1/2 sticks) butter, melted
- Dark Chocolate Filling and Milk Chocolate Frosting
- 4 ounces good milk chocolate, chopped
- 6 ounces good semi sweet chocolate, chopped (separated in half)
- 4 ounces good dark chocolate (60 or 70% cocoa), chopped
- 1 pound 4 ounces unsalted (5 sticks) butter
- 1 pound (4-5 cups) powdered sugar
- 2 teaspoons vanilla
- 1/4 cup cream
- Super Dark Chocolate Ganache
- 1 cup heavy cream
- 2 ounces good 100% cocoa bar, chopped
- 4 ounces good dark chocolate (70% cocoa), chopped
- 3 ounces good semi dark chocolate (60% cocoa), chopped
Cheeseburger Flatbread Melts

Brown and drain ground beef
- 1/2 lb lean ground beef, browned and drained
- 1/4 cup water
- 1/2 tbsp apple cider vinegar
- 1 pkg dry onion soup mix
- 1/4 cup ketchup
- 1 tbsp mustard
- 1 garlic clove, minced
- 2 tablespoons canola or vegetable oil
- 11 oz thin crust pizza dough
- 1 cup shredded cheddar cheese
Mint Chocolate Chip Cake

Butter and line the base of a two 9-inch cake tins (I only had a 22cm springform tin which I used for both cakes) a...
- For the icing:
- 9 tbsp unsweetened cocoa powder
- 1 1/2 cups cake flour (not self-raising, I just used plain flour and replaced 3 tbsp with cornflour/cornstarch)
- 1 1/2 tsp salt
- 1 tsp bicarb soda
- 1/4 tsp baking powder
- 115 g (1 stick) unsalted butter, at room temperature
- 1 1/2 cups caster sugar
- 2 large eggs, at room temperature
- 1/2 cup strong coffee (or water, I used a weak coffee as I didn't want it overpower the mint)
- 1/2 cup whole or low-fat milk
- 280 g (2.5 sticks) unsalted (or slightly salted) butter
- 500 g icing sugar (about 4 cups), sifted
- 2-3 tsp peppermint essence, adjust to taste
- 150 g dark chocolate, very finely chopped or pulsed through a food processor
- green food colouring
- Optional: waffle ice cream cones to decorate
Peanut Butter Cup Cupcakes

Directions: Cupcakes Be sure to preheat your oven to 350 degrees F
- Cupcakes
- 1 (18.25 oz) package devil’s food cake mix (I used Duncan Hines)
- 1 (3.4 oz) package instant chocolate pudding mix
- 1 cup sour cream
- 1 cup vegetable oil
- 4 eggs
- 2 tsp pure vanilla extract
- 1 Tbsp instant espresso granules, dissolve it in 1/2 cup warm water
- 30 Reese’s Miniatures peanut butter cups, frozen
- Peanut Butter Buttercream Icing
- 3 sticks unsalted butter, softened (I used Kerrygold, which is 1 1/2 blocks)
- 1 cup creamy peanut butter
- 2 Tbsp pure vanilla extract
- 2 lbs powdered sugar
- 3-4 Tbsp low-fat milk
- Reese's peanut butter cups minis (in a bag & they come unwrapped)
