Chocolate Cappuccino Smoothie

People always ask if coffee is OK… Kim's answer is that coffee, in moderation, is OK
- 1/2 can organic coconut milk
- 1/2 teaspoon vanilla
- 1-2 tablespoons organic cocoa powder
- 2 packets Stevia (or adjust to your taste)
- 3-5 organic coffee beans (if you have a powerful blender like a Vita-mix, you can just throw them in…otherwise grind with a coffee grinder or small spice grinder)
- 1/2 cup ice
- OPTIONAL: for an extra healthy boost, you can add greens powder, fresh greens, or cabbage
Tahini Kale

This is a power-packed side dish or salad
- 2 bunches kale, stems removed and chopped
- 2-3 cloves garlic, minced or pressed
- 3-4 tablespoons of tahini (sesame paste)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon liquid aminos or tamari
- 1 tablespoon nutritional yeast, optional
- juice of 1 lemon
- Depending on the size of your kale bunch, you can adjust the quantities. Feel free to add more or less of any of the ingredients – just do it to your own taste.
Bean Threads with Vegetables

Soak bean threads in filtered water for 10 – 15 minutes and drain
- 1 package bean threads (also called mung bean threads) Pictured here – you can find these in the Asian or Ethnic food section of most grocery stores. These are a great noodle alternative and acceptable in moderation on the Advanced Plan.
- 2 tbsp coconut oil
- 3 tbsp tamari or liquid aminos
- 1 tbsp sesame oil
- 1 clove garlic, pressed or minced
- 1 oz fresh ginger, peeled and grated
- 1 small onion, chopped
- 3 cups spinach

- 1 cup boiling water

- Organic chicken breakfast sausage or grass fed beef hot dogs (cut into 1 1/2 – 2 inch sections)
Strawberry Gelato

This is one of the easiest desserts I have ever made – only 3 ingredients and 3 minutes and you are in heaven!
- 1 – 10 oz bag of frozen strawberries (about 2 cups)
- 1 ripe avocado, pit and peel removed
- Stevia to taste
Chocolate Chip Cookies

Too many people think you have to be deprived to eat well and that is just not the case
- Makes about 24 cookies
- 2 1/2 cups Almond Flour (pictured with regular almond flour but can also be made with blanched almond flour)
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1/2 – 3/4 cup erythritol (like Swerve), xylitol or stevia to taste (stevia is not a 1:1 conversion so you have to add to your taste)
- 1 organic egg
- 1 tablespoon vanilla
- 1 stick (8 tablespoons) organic butter
- 1 bar sugarless chocolate bar like Simply Lite (Trader Joe’s) or Coco Polo or Lydia’s OR make a batch of chocolate bark from the book and chop into chunks
Fried Cabbage W/ Sausage

Melt butter in large skillet
- 1 stick butter or margarine
- 1 small head of cabbage, chopped
- 1 small onion, chopped
- 1/4 of green pepper
- 1 pound polish sausage, sliced into round pieces (I used Chicken Sausage)
- 1 (15 ounce) can diced tomatoes (I used Ro*Tel)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 1 3/4 cups already cooked white beans (great northerns)
- 5 large organic eggs
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon sea salt
- 6 tablespoons unsalted organic butter OR extra virgin coconut oil
- 3/4 cup xylitol plus 1/2 teaspoon liquid or powder pure stevia extract
- 6 tablespoons almond flour
- 1 teaspoon aluminum-free baking powder
- 1/2 teaspoon baking soda
Strawberry Cheesecake Bites

Here is a simply beautiful, elegant, easy to do dessert
- 1 lb large organic strawberries
- 8 oz. organic cream cheese, softened
- 1/2 tsp – 1 tsp Xylitol or spoonable stevia (this is to taste so sweeten it to your liking)
- 1 tsp vanilla extract
- Lightly toasted almond flour (watch it very carefully, it will brown quickly!)
