“Almond Joy” Cookies

This recipe came from a patient of West Cobb Chiropractic (April Hulsey) who likes to experiment in the kitchen
- 3 cups almond flour
- 1/2 cup coconut oil, melted
- 2 large organic eggs
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 cup erythritol (like Swerve), xylitol, or stevia to taste
- 1/4 teaspoon sea salt
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla
Low-Carb Avocado Chicken Salad

Cook chicken breast until done, let cool, and then chop
- 2 or 3 boneless, skinless chicken breasts
- 2 Avocados
- 1/4 chopped onion
- Juice of 1/2 a lime
- 2 Tbsp cilantro
- 2 Tbsp Grapeseed Oil Vegenaise
- Salt and Pepper to taste
- (I used all Organic ingredients)

- TOPPING:
- 1/2 cup of plain amasai or organic plain yogurt
- 1/4 cup of erythritol (like Swerve) or stevia to taste
- 2 organic eggs
- 2 1/2 cups of almond flour
- 1/4 teaspoon of sea salt
- 1/2 teaspoon of baking soda
- 2 tablespoons of ground cinnamon
- 4 tablespoons of erythritol (like Swerve), xylitol or stevia to taste
- 2 tablespoons of organic unsalted butter or coconut butter, melted
- OPTIONAL FROSTING: organic cream cheese mixed with stevia and vanilla to taste – spread on top or use as a dip (add some coconut milk to thin)
Vegetable Beef Soup

This super fast soup is a great way to use up any extra veggies you have laying around
- 1 lb grass fed ground beef
- 2- 32 oz containers of organic vegetable or chicken broth
- 2 tbsp butter
- 5 stalks celery, chopped
- 1/2 large onion, chopped
- 1/2 – 1 tsp Italian seasoning (to taste)
- 1/4 – 1/2 tsp black pepper (to taste)
- sea salt to taste (about 2 tsp)
- 2 tomatoes (preferably blanched and peeled – check notes below) or a can of organic crushed tomatoes
- Other Options: 1 bunch spinach, coarsely chopped, chopped zucchini, fresh or frozen green beans, bell peppers, crushed red pepper if you like it a little spicy ;-)
- Optional for core plan: carrots, peas
“Chicken Crust” Pizza

- 2 lbs boneless, skinless chicken thighs
- 6 cloves garlic (shredded or pressed)
- 5 eggs
- 2 tbsp Italian seasoning
- 1 can organic pizza sauce or homemade - check label to made sure it has no added sugar
- shredded cheese - Suggestion: Beyond Organic Greed Fed Cheddar
- 4 tbsp organic butter
- Add topping of your liking! ;-)
