Preheat oven 450 degrees Crust: Bring pizza dough to room temp
- 1/2 pizza dough from your grocer's deli
- all purpose flour for dusting
- 1 tablespoon course ground cornmeal
- 1/4 cup prepared pizza sauce
- 1 teaspoon anchovy paste
- 1 teaspoon granulated garlic
- 2 tablespoons olive oil, divided
- 1 cup shredded mozzarella cheese
- 1/3 cup parmesan cheese, freshly grated
- 1 tomato
- pinch of salt
- cracked black pepper
- 6-8 Spanish green olives
- 1 mild cherry pepper from a jar
- 1 tablespoon capers
- 1 teaspoon dried oregano
Bell pepper and pistachio soup

Heat pan over medium heat
- 1 yellow onion
- 2 tablespoons vegetable oil
- 3 cloves garlic
- 2 red bell peppers
- 1 teaspoon Hungarian paprika
- 1 teaspoon Hungarian hot paprika
- 1/4 teaspoon allspice
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups vegetable broth
- 1/2 cup shelled pistachios
- 1/2 cup heavy cream
Easy Crock Pot Chili

Brown hamburger in a skillet sprayed with non stick cooking spray over medium heat
- 1 3/4 pound 80/20 hamburger
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 medium yellow onion
- 1 jalapeño pepper
- 3 cloves garlic
- 1 28 ounce can tomato sauce
- 1 15 ounce can red kidney beans
- 1/8 cup chili powder
- 1/8 cup hot Mexican chili powder
- 1 teaspoon cumin
Salmon and Salami Pasta Salad

This pasta salad is fantastic warm or cold
- 12 ounce box Hidden Veggie Penne Rigate
- 7 ounces canned Alaskan salmon
- 3 ounces salami
- 1 stalk celery
- 1/2 medium red onion
- 1/2 green bell pepper
- 1/4 cup chopped scallions
- 2 tablespoons capers
- 2 tablespoons balsamic vinegar
- 1 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
- 1/2 cup olive oil blend mayonnaise
- 1 teaspoon dill paste (or dried dill)
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon pepper
- 1 ounce shaved Parmesan cheese
Mac 'n cheese with wilted kale & crispy onion

Similar to my smoked mac 'n cheese with bacon and greens recipe this is a vegetarian version and was made with the
- 2 cups elbow noodles (4 cups cooked pasta)
- 1/3 cup unsalted butter
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all purpose flour
- 1 1/2 cups low fat milk
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 cups shredded cheese*
- I used what I had on hand- a mix of mild cheddar, Jack, Swiss, Provolone and Parmesan
- 1/2 teaspoon freshly grated nutmeg
- 8 cups torn kale, stems removed
- 1 cup French's fried onions
Spinach, Tomato & Goat Cheese Pastatta

This hybrid dish is a cross between a frittata and a pasta based casserole
- 8 ounces fusilli dry pasta
- 2 tablespoons unsalted butter
- 1/4 cup all purpose flour
- 1 cup half and half
- 4 ounces goat cheese
- 1 teaspoon salt, divided
- 1 teaspoon pepper, divided
- 1 tablespoon olive oil
- 1 shallot, chopped
- 1 clove garlic, minced
- 8 ounces baby spinach
- 6 large eggs
- olive oil cooking spray
- 2 large ripe tomatoes, sliced
- 1 cup shredded mozzerella
Celery Salad with Lemon & Parmesan

Wash the celery and chop stalks and leaves into small pieces
- 3 Stalks celery
- 1 lemon
- 1 teaspoon honey
- 1 teaspoon olive oil
- dash of salt & pepper
- Shredded Parmesan cheese (2-3 tablespoons)
Meyer Lemon Vinaigrette

- 1 Lemon, juiced
- 2 teaspoons honey
- 1 Tablespoon white balsamic vinegar
- 3 Tablespoons Fiore Meyer Lemon Olive Oil
- Dash of sea salt and cracked black pepper
Quick French Toast with warm blueberries & Greek Yogurt

- 2 slices sandwich bread
- 1 egg
- 1/4 cup low fat milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2 teaspoons unsalted butter
- 1/4 cup wild Maine blueberries (fresh or frozen)
- 1 teaspoon maple syrup
- 2 heaping spoonfuls Cabot Vanilla Bean Greek Yogurt
Fried plantains with cinnamon & sugar, chocolate syrup & whipped cream
