Easy Chocolate Peppermint Loaf Cake

Preheat oven to 350 degrees F (325 degrees F for dark or nonstick pans and 2-3 minute longer baking times)
- For Cake:
- 1 box (16.5 ounces) devil's food cake mix
- 1 box (3.5 ounces) chocolate instant pudding mix
- 1/2 cup sour cream
- 3/4 cup vegetable oil
- 4 eggs
- 1/2 cup water
- 1/3 cup milk
- 2 teaspoons peppermint extract
- 1 1/2 cups (9 ounces) mini semi-sweet chocolate chips
- For Topping:
- 1/3 cup powdered sugar
- 1 1/4 teaspoons water
- 12 to 16 peppermint candies, chopped

The spiciness of this Thai-inspired soup comes from red curry paste, a mixture of red chiles, herbs and spices
- 1 tablespoon canola oil
- 6 large carrots, peeled, 4 thickly sliced, 2 cut into fine matchsticks
- 2 thin slices peeled fresh ginger
- 1 medium white onion, finely chopped
- 4 cups chicken stock or canned low-sodium broth
- 2 cups water
- 1/3 cup unsweetened coconut milk
- 3/4 teaspoon red curry paste (see Notes)
- 1 scallion, cut into matchsticks
- 1 tablespoon cilantro leaves
- 1 tablespoon finely chopped basil
Slow Cooker Chicken, Tomato and White Bean Soup

Place vegetables, garlic, salt and pepper in crock pot
- 1 medium onion, finely chopped
- 4 celery ribs, finely chopped
- 3 carrots, peeled and finely chopped
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 lbs cooked chicken breasts, cut into bite size pieces (about 4 cups)
- 2 tablespoons butter
- 3 (14 1/2 ounce) cans chicken broth
- 2 chicken bouillon cubes
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 1 (14 1/2 ounce) can white beans, drained and rinsed
- 1/4 cup finely chopped fresh parsley
- 1/4 teaspoon Tabasco sauce
