Sambal oelek you can find in most Walmarts in the oriental section, or any oriental store
- 2 Bunches of cilantro
- 2-3 jalapenos or similar pepper
- 6-8 cloves of garlic
- 2-3 tablespoons of olive oil
- 2 tablespoons of water (for the blender to operate)
- 2 tablespoons of sambal oelek (optional) or 4-6 small red peppers of medium heat
- juice from 1-2 fresh lemons or limes
- 1/4 bunch of regular parsley (optional)
Cauliflower Smash Up

In a pot on high heat, bring salted water to a boil
- 1 1⁄2 lbs. small potatoes (Carmen uses yellow)
- 1 ⁄2 head cauliflower
- 1 ⁄2 Cup milk
- 2 TB. butter
- 1 ⁄2 Cup shredded cheese of choice (Carmen likes the 5
- Italian cheese blend available in most grocery stores)
- 1 TB. BRADY STREET CHEESE SPRINKLE
- 1 ⁄4-1⁄2 tsp. GRANULATED GARLIC, to taste
- 1 ⁄4-1⁄2 tsp. PENZEYS FRESHLY GROUND PEPPER, to taste

Grilled Salmon With Lime Butter Sauce

In a blender, puree the garlic, lime juice, salt and pepper until smooth
- 3 salmon fillets
- 1 garlic clove (chopped)
- 14 cup lime juice (fresh)
- 1 tsp salt
- 12 tsp black pepper
- 12 cup butter (melted)
- 112 tsps lime zest (finely grated)
- 12 cup cilantro (chopped)
Slow Cooker Potato Soup

Cooking time: 4-8 hours
- 31/2-4 lbs. red potatoes, chopped into chunks (peel if desired)
- 3 cloves garlic, minced (or 3/4 tsp. PENZEYS MINCED GARLIC)
- 1/2 tsp. KOSHER STYLE FLAKE SALT
- 1/2 tsp. PENZEYS FRESHLY GROUND PEPPER

- 8 Cups water

- 1-1/2 pounds bluegill or crappie fillets
- 1/2 cup canola oil, divided
Moroccan Chicken with Lemon and Olives Recipe

Combine all the spices in a large bowl
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon freshly ground pepper
- 2 Tbsp olive oil
- 1 chicken, 3-4 lbs, cut into 8 pieces (or 3-4 lbs of just chicken thighs and legs, the dark meat is more flavorful)

- 1 onion, chopped
- The rind from 1 preserved lemon, rinsed in cold water, pulp discarded, rind cut into thin strips (if you don't have preserved lemon, use whole thin slices of regular lemon)
- 1 cup green olives, pitted
- 1/2 cup water
- 1/2 cup raisins
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh flat-leaf parsley
