Pumpkin Pie Cheesecake (Sugar Free)

Directions: Preheat oven to 325 degrees
- For Crust
- 2 Pre made Grahm Cracker pie crusts
- For Filling
- 32 oz. fat-free cream cheese, room temperature
- 1 cup fat-free liquid egg substitute (like Egg Beaters Original)
- 1 cup canned pure pumpkin
- 1 cup Splenda No Calorie Sweetener (granulated)
- 1/4 cup light brown sugar (not packed)
- 1 tsp. vanilla extract
- 1 tsp. pumpkin pie spice
- For Topping
- 3/4 cup fat-free sour cream
- 1/4 cup Splenda No Calorie Sweetener (granulated)
- 1/2 tsp. vanilla extract

- 1/2 cup diced tomatoes
- 1 large green bell pepper, diced
- 2 stalks celery, sliced 1/4 inch thick
- 1 cup uncooked brown rice
- 3 cups chicken stock
- 1 pound large shrimp, peeled and deveined

- 1/8 teaspoon ground allspice
- Pinch of ground cloves

- 10 tbsp unsalted butter
- 1 cup dark brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/4 tsp kosher salt
- 1 1/4 cup flour
- 1 1/4 cup sweetened flaked coconut
- 1 1/4 cup bittersweet or semisweet chocolate chips (I used just a cup.)

- For the muffins:
- 1 cup whole wheat flour (I haven’t tried subbing a gf all-purpose mix, but I think it would work.)
- 3/4 cups unbleached all-purpose flour
- 1 tablespoon aluminum free baking powder
- 1/8 cup Stevia In the Raw or granulated sugar
- 1 1/4 teaspoon pumpkin pie spice
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/4 teaspoon sea salt
- 1 cup organic pumpkin puree
- 1/4 cup light brown sugar
- 2 tablespoons apple butter or applesauce
- 1/2 cup unsweetened vanilla almond milk (or milk of choice)
- 1/4 heaping cup vegetable or coconut oil
- For the Filling:
- 3/4 cup organic pumpkin puree
- 1 tsp Stevia In the Raw or granulated sugar
- 1 tbsp light brown sugar
- 2 tablespoons apple butter or applesauce
- 1 tbsp vegetable or coconut oil
