- 190 grams Almond Meal (~1 1/3 cups)
- 310 grams Powdered Sugar (~2 4/5 cups)
- 150 grams Aged Egg Whites (Leave at room temp for a day in a cool room or place in fridge for 4 days) (~5 eggs)
- 95 grams Sugar (~7/16 cups)
- 1/2 tsp Red Food Coloring (Gel, not liquid)
- 1.5 cups Strawberry Preserves
- Dark Chocolate for Melting/Dipping (I used Wilton's Candy Melts)

1) Preheat oven to 475 degrees and place large roasting pan with about 1 inch of water in the oven
- 1 whole pack of Oreo's, filling removed
- 1/2 cup butter/margarine
- 1/2 cup raspberry preserves, seedless
- 1/4 cup water
- 4 x 8 oz pkgs cream cheese
- 1 1/4 cups granulated sugar
- 1/2 cup sour cream
- 2 tspn vanilla extract
- 5 eggs
- 4 oz white chocolate, chopped into chunks

- 6 egg yolks
- 1/3 cup Raw Sugar
- 7 tablespoons Bread Flour
- 4.25 ounces Dark Chocolate

1) Grease one 10-inch springform pan
- FOR THE BASE BATTER:
- 3/4 cup white sugar
- 1/4 cup softened butter
- 1 egg
- 1/2 cup milk
- 1 tbsp vanilla extract
- Sift together:
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp. salt
- FOR THE CREAM CHEESE BATTER:
- 2 pkg. (8 oz. each) cream cheese, softened
- 3/4 cup sugar
- 1 tbsp. vanilla extract
- 1 tbsp. lemon zest or juice(optional)
- 1 tbsp. flour
- 3 eggs
- FOR THE CINNAMON FILLING:
- 1/3 cup butter
- 1 cup brown sugar
- 3 tbsp. cinnamon
- FOR THE TWO ICINGS (One Cinnamon, One Traditional Frosting) (FOR FINISHED CHEESECAKE):
- 6 tbsp butter, softened
- 1 tbsp lemon juice
- 2 tsp. vanilla
- 1 tbsp Cinnamon
- 1/4 cup Brown Sugar
- 1.5 cup powdered sugar
