Sour Cream Enchiladas

This is just something I kind of made up as I went along
- 2 packs of 10” flour tortillas
- 2 lbs ground turkey
- 1 package taco seasoning
- 2+ cups Jack cheese
- 2+ cups sharp cheddar cheese
- 1 chopped onion
- 1 can do black beans, rinsed
- 2 cans green chili’s
- 16 oz sour cream
- 2 cans Campbell Cream of Chicken soup
- Chicken broth

In a skillet, cook bacon until crisp and drain on paper towels leaving about 1 tablespoon bacon grease in the skill...
- 1 lb thick bacon diced
- 1 large onion diced
- 3 cloves garlic minced
- 1 lb lean ground beef
- 2/3 cup uncooked long grain rice
- 6-8 cups cabbage chopped
- 1 28 ounce can diced tomatoes
- 1 10 oz can tomato soup
- 2 tablespoons tomato paste
- 5-6 cups beef broth
- 1 1/2 cups V8 or other vegetable juice
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 tablespoon Worcestershire sauce
- salt and pepper to taste
- parsley for garnish
Cornbread Dressing

Prepare cornbread according to directions on package
- 2 (16 ounce) packages dry corn bread mix
- 1 onion, diced
- 1 clove garlic, minced
- 1 bunch celery, chopped
- 6 hard-cooked eggs, chopped
- 1 teaspoon rubbed sage
- 2 (14 ounce) cans chicken broth
- 2 cups turkey stock
- salt and pepper to taste
Parched Peanuts

Place single layer on a cookie sheet and bake at 325 degrees for approx
- Peanuts in shells for roasting. (Not green peanuts, they're for boiling)
Shrimp Creole

- 1 lb raw, peeled and deveined shrimp, fresh or frozen
- 1/4 cup all purpose flour
- 1/3 cup cooking oil (already made roux will work fine)
- 1 cup hot water
- 1 8 oz. can tomato sauce
- 1.2 cup chopped green onions and tops
- 1/2 cup chopped parsley
- 1/2 cup chop0ped green pepper
- 4 small cloves garlic, finely chopped
- 1 1/2 tsp salt
- 1/2 tsp crushed whole thyme
- 1/8 tsp cayenne pepper
- 2 whole bay leaves
- 1 lemon slice
- 2 cups cooked rice
Baked Pork Chop Casserole

Spoon mixture into 9x13 baking dish
- 1 cup cream of celery soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1/4 tsp pepper
- 1/2 twp salt
- Mix these ingredients together.
- Stir in 1 pkg (24oz) hash brown potatoes
- 1/2 cup shredded cheddar cheese
- 1/2 cup french fried onions
Spiced Punch

You'll need a percolator for this recipe
- 1 quart apple cider
- 1 pt orange juice-no pulp
- 1 pt cranberry juice
- Put these into percolator basket
- 1 teaspoon whole allspice
- 1/2 cup sugar
- 3 sticks cinnamon
Blueberry Pound Cake

1. Preheat oven to 350 degrees
- 1 box Duncan Hines Butter cake mix
- 1 8oz pkg. cream cheese, softened
- 3 eggs
- 1 stick butter
- 3 Tbsp sugar
- 2 cups fresh blueberries, washed and dried before using
Banana Pudding - from scratch

In a double boiler melt butter then add flour
- 1 cup+2 Tbs sugar
- 3/4 cup+3 Tbs flour
- pinch of salt
- 1 stick of butter
- 2 boxes Nilla Vanilla Wafers
- 4 cups milk
- 4 eggs, slightly beaten
- 2 Tbs vanilla extract
- 4 or 5 bananas
