Spiced Eggnog Muffins with Streusel Topping

Preheat oven to 375°. Line 12 regular size muffin cups with paper liners and set aside
- 2-1/4 c. all-purpose flour
- 1 c. sugar
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- pinch ground cloves
- 2 large eggs, lightly beaten
- 1 c. eggnog
- 1/2 c. unsalted butter, melted and cooled
- 2 tsp. pure vanilla extract
- 1/3 c. all-purpose flour
- 1/3 c. sugar
- 1/2 tsp. ground nutmeg
- 1/8 tsp. kosher salt

For Dough: Place flour, baking powder and salt in food processor; process for 5 seconds
- Masa (Dough):
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt (optional)
- 1/2 cup vegetable shortening
- 1/2 cup warm NESTLɮ CARNATION Evaporated Milk
- 1 large egg white lightly beaten with 1 tablespoon water
- Chicken Filling:
- 2 tablespoons butter
- 1/4 cup chopped onion
- 1 clove garlic, finely chopped
- 1/2 cup NESTLɮ CARNATION Evaporated Milk
- 1 cup cooked, chopped boneless, skinless chicken breast (about 1 small breast)
- 1 tablespoon chopped fresh cilantro or herb of your choice

- 1/4 teaspoon salt (optional)
- 1 cup (4 ounces) shredded 4 cheese Mexican cheese blend or any shredded cheese

- 1 tub(12 oz.) COOL WHIP Whipped Topping, thawed, divided
- 2 pkg.(3.9 oz. each) JELL-O Chocolate Instant Pudding
- 3-1/4 cupscold milk
Chocolate Tortilla Ice Cream Enchilada

- 2 tablespoons plus 2 tsp. smoked paprika
