Chicken and Avocado lettuce boats with buttermilk Dijon dressing

In a small bowl, whisk together all of the dressing ingredients, and set aside
- For the dressing:
- 1/2 cup plain nonfat yogurt
- 1/4 cup buttermilk
- 1 Tbsp fresh lemon juice
- 1 tsp capers, chopped
- 1/4 tsp agave nectar
- 1/2 tsp rice vinegar
- 1/2 tsp Dijon mustard
- 1 Tbsp chopped fresh flat-leaf parsley
- 1/4 tsp fresh black pepper, or to taste
- For the salad:
- 2 cups diced cooked chicken breast (I use rotisserie chicken from the grocery store)
- 1 avocado, peeled and diced
- 1/2 large green bell pepper, diced
- 1/2 cup diced cucumber
- 2-3 plum tomatoes, diced, or 3/4 cup of cherry tomatoes
- Handful of black olives, cut in half
- Fresh dill weed (2 Tbsp chopped, plus extra for garnish)
- 1/2 cup crumbled feta cheese
Guacamole

Guacamole at its base is mashed avocados and from there you can start adding more ingredients
- 2 large avocados, mashed
- 1 lime, juice
- 1 jalapeno pepper, finely diced
- 1 romano/plum tomato, seeded and finely diced
- 1/4 cup red onion, finely diced
- 1 tablespoon cilantro, chopped
- 1/2 teaspoon cumin, toasted and ground
- salt and pepper to taste
Avacado Breakfast Burrito

Wrap tortillas in foil; warm in a 400 degree F oven
- 4 flour tortillas (about 11 inches in diameter)
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/3 cup chopped onion
- 3 tablespoon butter
- 8 eggs
- 1/4 tsp salt
- 1 tsp black pepper
- 1/2 cup of cooked, crispy bacon
- 1 avocado (8 ounces), diced
- 1/2 Cup shredded Pepper Jack cheese
- Garnish with salsa, sour cream and cilantro
