Baked Green Bean Fries with Roasted Garlic Dipping Sauce

Preheat the oven to 425°F
- For the fries:
- 8 ounces green beans, trimmed
- 1/2 cup all purpose flour
- 2 eggs
- 1 1/2 cups panko bread crumbs
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Kosher salt
- Freshly ground black pepper
- For the dipping sauce:
- 1 small head of garlic, roasted and smashed into a paste
- 1/4 cup light mayonnaise
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- Kosher salt
- Freshly ground black pepper

- 1/2 cup mayonnaise
- 1/3 cup white vinegar
- 1 teaspoon vegetable oil
- 2 tablespoon corn syrup
- 2 tablespoons Parmesan cheese
- 2 tablespoons Romano cheese
- 1/4 teaspoons garlic salt
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon parsley flakes
- 1 tablespoon lemon juice
Healthy Three Cheese Chicken Pasta Bake

- 1 1/2 cups multi-grain penne pasta, uncooked
- 1 (9 ounce) package fresh spinach leaves
- 1 pound uncooked chicken breasts cut into bite sized pieces
- 1 Tablespoon fresh basil or 1 teaspoon dried basil
- 1 (14.5 ounce) jar spaghetti sauce
- 1 teaspoon minced garlic
- 1 (14.5 ounce) can diced tomatoes, drained
- 2 ounces Neufchatel cheese, cubed
- 1 cup shredded 2% milk mozzarella cheese
- 2 Tablespoons grated Parmesan cheese
Baked Chicken and Spinach Flautas

Preheat the oven to 450*F
- 1 pound boneless, skinless Chicken Thighs (about 4)
- 16 ounces Beer
- 2 cups Water
- 1 teaspoon Paprika
- 1 teaspoon Kosher Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon ground Cumin
- 1 teaspoon Chili Powder
- 1 Jalapeno Pepper, minced
- 3 cups Baby Spinach, chopped
- 5 burrito-size Flour Tortillas (9 inches)
- 6 ounces Queso Quesadilla or other melting cheese, shredded
- 1 tablespoon Olive Oil, or cooking spray
- Salsa, for serving
Pico de Gallo

Add some salt and stir
- 4 roma tomatoes – diced
- juice of one lime – a lot of juice makes it soooo good!
- 2 fresh garlic cloves – pressed or finely chopped ( I use my garlic press – makes it easy!)
- a good handful of cilantro – pluck the leaves off, throw out the stems and chop
- 1/2 to one whole jalapeno – depending on how hot you want it….de-seed and chop finely…..
- 1/2 yellow or purple onion – diced….can be same size as tomatoes…(you just want the garlic and jalapeno tiny so they blend easier)
Monterey Chicken

- 1/4 c. bar-b-que sauce ( I use Bull's Eye)
