Ham and Swiss Croissant Sliders with Poppy Seed Dressing

Slice the croissants and spread the top half with 1/2 teaspoon of mayonnaise
- 12 Mini Croissants or Dinner Rolls
- 6 ounces of sliced ham
- 6 ounces of sliced swiss cheese
- 6 teaspoons mayonaise
- 1/2 cup melted butter
- 1 tablespoon dijon mustard
- 1 tablespoon poppy seeds
Irish Car Bomb Cupcakes

Make the cupcakes: Preheat oven to 350°F
- For the Guinness Chocolate Cupcakes
- 1 cup stout (such as Guinness) (or substitute brewed coffee)
- 1 cup (2 sticks) unsalted butter
- 3/4 cup unsweetened cocoa powder (preferably Dutch-process)
- 2 cups all purpose flour
- 2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 2 large eggs
- 2/3 cup sour cream
- Ganache Filling (Optional – I skipped it and they were still heavenly!)
- 8 ounces bittersweet chocolate
- 2/3 cup heavy cream
- 2 tablespoons butter, room temperature
- 1 to 2 teaspoons Irish whiskey (optional)
- Baileys Frosting (see Recipe Notes)
- 3 to 4 cups confections sugar
- 1 stick (1/2 cup or 4 ounces) unsalted butter, at room temperatue
- 3 to 4 tablespoons Baileys (or milk, or heavy cream, or a combination thereof)
- Special equipment: 1-inch round cookie cutter or an apple corer and a piping bag, though a plastic bag with the corner snipped off will also work. (Not needed if you skip the filling.)

- 1 lg onion, finely chopped
- 2 cans cream of mushroom soup
- 2 cans tomato soup
- 2 small bottles ketchup

- 1 tsp vanilla

- 2 TB sugar

Chicken Salad with ShoeString Potatoes

- 4 cups cooked chicken, cubed
- 1 cup shredded carrots
- 1 cup chopped celery
- Chopped onion
- 1/2 cup Miracle whip
- 2/3 cup mayonnaise

- 1 T lemon juice

- 3-4 canned, whole jalapenos (not pickled)

- 1/2 teaspoon salt
- 1 teaspoon cumin

- 2 8oz balls mozzarella
- 6 tomatoes
- 4 green onions
- 1 sprig basil
- 1 packet Dry Italian Dressing
- Extra Virgin Olive Oil
- Balsamic Vinegar
Pan Seared Salmon with Avocado Remoulade

Put avocado pieces and lime juice into a food processor or blender and pulse until blended
- 2 large avocados, cut and peeled
- 3 Tbsp freshly squeezed lime juice (can substitute lemon)
- 3-4 Tbsp light olive oil (light refers to flavor and color, not calories)
- 1 Tbsp minced shallots or green onion
- 1 Tbsp minced parsley
- 1 teaspoon Dijon mustard or to taste
- Salt and pepper to taste
- 1 to 1 1/2 pounds of salmon fillets
- Grapeseed or canola oil
