Chicken Tortilla Soup

Add all ingredients in a large pot and cook on low heat for about 30 minutes or until heated throughout

- 2-3 cooked and shredded chicken breasts (about 1 lb)
- 1 Can Corn (drained)
- 1 Can Black Beans (drained and rinsed)
- 1 Can Diced Tomatoes
- 1 Small Can Diced Tomatoes w/ Green Chilies
- 6 Cups Low Sodium Chicken Broth
- Low fat sour cream
- Cilantro
- A few tortilla chips crunched up
- Low fat shredded cheese

1. In a large skillet, heat the olive oil over medium-high heat
- 1 Tablespoon extra-virgin olive oil
- 2 cups shredded store-bought rotisserie chicken
- 1 cup frozen baby peas
- 1/2 cup chicken broth
- 2 cloves garlic (finely chopped)
- pinch Cayenne pepper
- 12 ounces wagon wheels or other short pasta
- 1/2 cup freshly grated parmesan cheese (+sprinklng)
- 1 tablespoon butter

Chicken Caprese

Preheat grill to medium heat Season chicken with salt and pepper
- 2 6 to 8oz chicken cutlets, pounded thin
- 1/4 cup extra virgin olive oil, plus some for drizzling
- 1/4 cup balsamic vinegar
- 1 vine-ripened tomato, cut into thick slices
- 1 ball fresh mozzarella, cut into thick slices
- 24 leaves fresh basil, chopped

Shrimp Toast Puffs with Two Sauces

1. Preheat oven to 425°. 2
- Puffs:
- 1 pound peeled and deveined medium shrimp
- 2 bacon slices, diced
- 1/3 cup finely chopped green onions
- 1 1/2 teaspoons bottled ground fresh ginger (such as Spice World)
- 1 cup all-purpose flour (about 4 1/2 ounces)
- 1 cup water 3 tablespoons butter
- 1/2 teaspoon sugar
- 2 large egg whites
- 1 large egg
- Cooking spray
- Soy-garlic sauce:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons finely chopped green onion tops
- 2 tablespoons seasoned rice vinegar
- 1 teaspoon hot chili sauce with garlic (such as KA-ME) 1/2 teaspoon dark sesame oil
- Sweet chili sauce:
- 6 tablespoons sweet chili garlic sauce (such as Taste of Asia)
- 4 teaspoons seasoned rice vinegar
White Chocolate Macademia Nut Cookies

PREHEAT oven to 375° F. COMBINE flour, baking powder, baking soda and salt in small bowl
- 1 2/3 cups all-purpose flour
- 3/4 teaspoon baking powder

Chipotle Chicken Anything! (Slow Cooker)

Step One Place chicken on bottom of crockpot and add all of the other ingredients on top
- 5-6 Boneless, skinless chicken breasts
- 1 large Jar of Chipolte sauce
- 1 Can of Black beans, rinsed
- 1 Can of Corn, not drained
- 1 small Can of Green chilis
- 1 Medium onion, diced
- 2 Packages of Reduced sodium taco seasoning
- Shredded lettuce, sour cream, shredded cheese, and taco shells or tortillas for after cooking as you like!
Balsamic Chicken

Preparation Combine balsamic vinegar, soy sauce, shallots, brown sugar, garlic, and 1 tablespoon olive oil
- 1/3 cup balsamic vinegar
- 1/4 cup lower-sodium soy sauce
- 1/4 cup minced shallots
- 3 tablespoons brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1 tablespoon olive oil
Gravy (Mashed Potatoes)

- 3/4 Cup Water
- 4 Heaping Tablespoons of Flour
- Potato Water
- Meat Grease Drippings

Penne with Turkey Meatballs

In a large bowl add bread crumbs milk and mix until well combined
- Sauce:
- 1/4 cup plain dried bread crumbs
- 2 tablespoons whole milk
- 2 large eggs, lightly beaten
- 3/4 cup grated Romano
- 1 pound ground turkey, preferably dark meat
- Salt and freshly ground black pepper
- 1/4 cup extra-virgin olive oil
- 5 cups tomato sauce, recipe follows
- 1 pound dried penne pasta
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 2 dried bay leaves
- 4 tablespoons unsalted butter, optional
