Barbecued Chicken Pizza

Barbecue-flavored chicken and onions are the imaginative topping for this tasty pizza
- Dough:
- your favorite pizza crust recipe, using about 3 cups of flour and prepared through its first rise
- Topping:
- 1 tablespoon olive oil
- 2 cloves garlic, peeled and chopped
- 1 1/2 to 2 pounds boneless chicken, breasts or thighs, cut into 1" pieces (or use leftover roast chicken)
- 1 1/2 cups prepared barbecue sauce
- 2 1/2 cups red onions, chopped in large pieces; about 2 medium-large onions
- salt and pepper to taste
- 2 cups shredded mozzarella cheese
Grilled Shrimp Cocktail with Mediterranean Salsa

Rinse the shrimp under cold running water, then blot dry with paper towels
- Mediterranean Salsa, for serving:
- 16 jumbo shrimp (about 1-1/2 pounds), peeled and deveined
- 2 tablespoons coarse salt (kosher or sea)
- 1 tablespoon cracked black pepper
- 2 cloves garlic, finely minced
- 1 tablespoon fresh tarragon, finely minced
- 2 teaspoons lemon zest, finely minced
- Juice of 1 lemon
- 1/2 cup extra-virgin olive oil
- 2 large ripe red tomatoes, peeled, seeded, and finely diced
- 1 small white onion, finely diced
- 1/2 cup finely diced hothouse cucumber (see Note)
- 1 clove garlic, finely minced
- 16 kalamata olives, pitted and chopped
- 2 tablespoons small brined capers, drained
- 1 tablespoon fresh tarragon, minced
- 1/4 cup good quality extra-virgin olive oil
- 1 tablespoon fresh lemon juice (or more to taste)
- Coarse salt (kosher or sea)
- Freshly ground black pepper
- You’ll also need:
- A grilling grid to keep shrimp from falling through the grill grate
Marinated Tomato Salad with Herbs

Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl
- 6 to 8 ripe tomatoes
- 4 green onions
- 1 cup extra-virgin olive oil
- 3 to 4 tablespoons balsamic vinegar

- Handful fresh parsley leaves, lightly chopped

- Cake:
- 2 1/4 cups cake flour
- 1 1/4 teaspoons baking powder

- 1 1/2 cups sugar
- 3 large eggs

- Whipped White Chocolate Lemon Ganache:
- 6 ounces high-quality white chocolate, finely chopped
- 1 cup heavy cream
