Polish Sausage and Peppers

Put all above into a roaster
- Cooks to perfection in an 18 quart roaster!
- 12 lbs. Polish Sausage cut in 3" pieces
- 20 large green peppers, seeded and sliced
- 8 lbs. onion, sliced
- 2-3 cans beer (sub. 7-Up or apple juice if desired with maybe a tablespoon of balsamic vinegar)

- 1 cup Red peppers -- coarsely
- sauted in
- 3 tablespoons Olive oil or chili oil
- 1 tablespoon Chopped garlic
- 1 tablespoon Chopped canned chiles
- 1/2 cup Sour cream
- 1/3 cup Cheddar cheese -- fresh grated or small cubed
- 1 extra-large egg
- 1 tablespoon Regular honey or chili honey
- 1/4 cup Pepper-flavored vodka (or -- regular)
- 2 teaspoons Salt
- 10 drops Tabasco sauce
- 1/2 teaspoon Ground coriander
- 1 cup Cornmeal
- 2 cups Unbleached white flour
- 1 tablespoon Yeast
Potato And Bacon Bread

1. Combine all ingredients in pan, in order listed, yeast last 2
- 1-1/2 cups water
- 3 tablespoon butter
- 3 cups bread flour
- 3/4 cup instant potato mix
- 4 1/2 tablespoons bacon bits
- 4 tablespoon dry milk
- 4 tablespoon sugar
- 1 teaspoon salt
- 2 1/4 teaspoons bread machine yeast
Apricot Glaze

Mix all ingredients
- 1 tablespoon all-purpose flour
- 1 jar (12 ounces) apricot preserves
- 1/4 cup light corn syrup
- 2 tablespoons cider vinegar
- 1/2 teaspoon dry mustard
Chile Corn and Cheese Casserole

DIRECTIONS Char chiles over gas flame or under broiler until blackened on all sides
- 6 large fresh poblano chiles
- 1/4 cup (1/2 stick) butter
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 3 cups fresh corn kernels, or frozen thawed (from about 6 ears or two 10-ounce packages)
- 1 cup grated manchego or monterey jack cheese
- 4 cups cooked white rice
- 1 cup crema or sour cream
- 1 1/3 cups Red Salsa
- 1/2 cup grated queso anejo or parmesan cheese

- 3/4 teaspoon ground cinnamon

Ratatouille

Directions Heat oil in a deep-sided 10-inch skillet over medium-high heat
- 1/4 C. extra-virgin olive oil
- 1/2 tsp. red pepper flakes
- 2 tsp. coarse kosher salt
- 1/4 tsp. freshly grated black pepper
- 1 medium red onion, peeled, stem ends removed, quartered, sliced thin
- 6 large cloves garlic, peeled, sliced thin
- 6 medium tomatoes, cored, seeded, roughly chopped
- 2 6-inch zucchini, stem ends removed, halved lengthwise, cut into 1/4-inch slices
- 2 6-inch yellow summer squash, stem ends removed, halved lengthwise, cut into 1/4-inch slices
- 1/2 cup pitted Niçoise olives, chopped
- 2 Tbs. herbes de Provence
- 2 Tbs. country-style Dijon mustard
- 1/2 C. red wine

- 1 3/4 ts Yeast
- 1/3 c Crumbed cooked bacon
- 3/4 c Flat beer
- 2/3 c Water
- 1/4 c Chopped green onions
- 2 tb Mustard
- 4 1/4 c Bread flour
- 1 tb Sugar
- 1 t Salt
- 1 1/2 ts Yeast*
- 1/2 c Crumbed cooked bacon
