KICKED-UP MEATLOAF

In a bowl combine ground beef with oats, onion, half the ketchup, ½ tbsp
- 1 and 1/2 lb. ground beef
- 1/3 cup rolled oats, uncooked
- 1/4 onion, minced
- 1/2 cup ketchup, divided
- 2 tbsp. horseradish, divided
- 2 tbsp. milk
- 1 egg, lightly beaten
- 1/4 tsp. ground black pepper
- 1/2 tsp. salt
- 2 tsp. mustard
- 1 tsp. parsley
- 1 and 1/2 Tbsp. brown sugar
MUFFINS

Combine dry ingred. Mix liquids in separate bowl
- 1 3/4 c (all purpose) flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 tsp cinnamon
- 1/3 c vegetable or canola oil
- 3/4 c white granulated sugar
- 1 egg
- 3/4 c milk
Slow-Cooker Chicken Cacciatore

1. Pat chicken dry with paper towels
- 1 package chicken breasts (about 4-1/2 pounds), skin removed, trimmed of excess fat
- 1/4 cup flour
- 1 tablespoon olive oil
- 2 cups thinly sliced mushrooms
- 1 large green pepper, seeded and chopped
- 1 large onion, chopped
- 4 cups canned diced or crushed tomatoes, drained
- 1 cup white wine
- 2 teaspoons Italian seasoning
- 2 teaspoons dried basil leaves
- 1 teaspoon black pepper
- 1 teaspoon salt
Monte Cristo Sandwiches

In a medium bowl, whisk eggs and milk until well combined
- 6 eggs
- 1/2 cup milk
- 1/2 pound thinly sliced deli turkey
- 1/2 pound thinly sliced deli ham
- 8 (1-ounce) slices Swiss cheese
- 16 slices egg bread (challah)
- 4 tablespoons (1/2 stick) butter
Hoppin' John

In a medium saucepan, combine the bacon, onion, salt and pepper over medium heat
- 4 slices Bacon ; diced
- 1 medium Onion ; chopped
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- 1 can Black-eyed Peas
- 3 cups Hot Cooked Rice
Skillet Goulash

Cook and drain pasta as directed on package
- 2 2/3 cups uncooked rotini pasta (8 oz)
- 1 lb lean (at least 80%) ground beef
- 1 1/2 cups chopped celery (about 3 stalks)
- 1 cup chopped onions (2 medium)
- 2 cans (14.5 oz each) diced tomatoes, undrained
- 1 can (10 3/4 oz) condensed tomato soup
- 1 teaspoon dried basil leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Orange Salad

Combine ingredients. Let set in refrigerator
- 2 pkgs. Orange Jello
- 1 1/2 cups Boiling Water
- 1 Pint Orange Sherbet ; (or 2 cups)
- 1 can Mandarin Oranges ; (8 oz.)
- 1 can Crushed Pineapple ; (20 oz.)
Strawberry Bavarian

Dissolve gelatin in hot water, add ice water
- 1 pkg Strawberry Gelatin
- 1/2 cup Ice Water
- 1 cup hot water
- 2 pkgs. (10 0z) Frozen Strawberries or 2 1/2 cups) - Save Juice
- 2 cups Whipping Cream whipped (2 half pint boxes of whipping cream before whipped)
- 1 Angel Food Cake
Honey Cornbread Muffins

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 1/2 stick butter, melted
- 1/4 cup honey
- Special equipment: paper muffin cups and a 12-cup muffin tin
Pork Roast with Apple Mustard Glaze

- Kosher salt and freshly ground black pepper
- 1 1/2 cups apple juice
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 3 tablespoons spicy brown mustard
