Mama Loves Food!: Baked Potato Soup - Slow Cooker Style

Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker
- 5 pounds russet potatoes, washed but NOT peeled. Diced into 1/2 inch(ish) cubes
- 1 medium/large yellow onion, diced
- 10 cloves of garlic, minced (if you use jarred, it's a 5 teaspoon equivalent)
- 64 ounces (8 cups) chicken stock or broth
- 16 oz cream cheese, softened (I use low fat)
- 1 tablespoon seasoned salt (I use Aunt Cora's Soulful Seasoning)
- optional garnishes: crumbled bacon, shredded cheese, green onions
Lazy Chiles Rellenos Recipe

Preheat the oven to 325 degrees F
- 2 cups whole milk or evaporated milk
- 5 whole large eggs
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 12 whole roasted, peeled and seeded green chiles (can use canned whole green chiles)
- 1 1/2 cups grated Monterey Jack
- Warm corn tortillas, for serving
Ten Minute Szechuan Chicken

Directions: Place the chicken and cornstarch into a bag or bowl, and toss to coat
- 4 boneless skinless chicken
- breasts, cut into cubes
- 3 tablespoons cornstarch
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 5 tablespoons low-sodium soy
- sauce
- 1 1/2 tablespoons white wine
- vinegar
- 1/4 cup water
- 1 teaspoon white sugar
- 3 green onions, sliced diagonally
- into 1/2 inch pieces
- 1/8 teaspoon cayenne pepper, or
- to taste

Combine all the ingredients in a small pot over medium heat
- 1 lb. strawberries, washed, hulled & sliced
- 1/4 cup sugar or grated panela/piloncillo - adjust more or less to your preference
- 1/4 cup water
- 1/2 lemon, juiced
Golden Chicken & Vegetable Saute

Combine flour with pepper in shallow dish
- 1/3 cup all-purpose flour
- 1/4 tsp. ground black pepper
- 1 lb. boneless, skinless chicken breasts , pounded thin
- 2 eggs , lightly beaten
- 3 Tbsp. Country Crock® Spreadable Butter With Canola Oil , divided
- 1 medium red onion , finely chopped
- 2 cups sliced assorted fresh vegetables (such as asparagus and/or bell peppers)
- 1 cup water
- 1 tub Knorr® Homestyle Stock - Chicken
Chicken Caprese

Heat oil in 12-inch nonstick skillet over medium high heat and cook chicken, turning once, 3 minutes
- 4 boneless, skinless chicken breast halves (about 1-1/4 lb.)
- 1 Tbsp. olive oil
- 1/2 cup onion , finely chopped
- 1 large tomato , finely chopped
- 1 tub Knorr® Homestyle Stock - Chicken
- 3/4 cup water
- 1/2 cup small cubes mozzarella cheese (about 2 oz.)
- 2 Tbsp. thinly sliced fresh basil leaves
Huevo in the Hole

Stack the three tortillas on top of one another and use a circular cutter to cut a circle out of the middle

The Best Green Beans Ever

Directions Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer
- 1 pound green beans
- 2 tablespoons bacon grease (can substitute 2 tablespoons butter)
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 cup chicken broth, plus more if needed
- 1/2 cup chopped red bell pepper
- 1/2 to 1 teaspoon kosher salt (can substitute regular tablesalt, use 1/4 to 1/2 teaspoon)

Chicken Scampi

- 1 lb. boneless, skinless chicken breasts , cut into 1-inch pieces
- 3 cloves garlic , finely chopped
- 2 Tbsp. lemon juice
- 2 Tbsp. I Can't Believe It's Not Butter!® Spread
- 1/4 cup dry white wine
- 3/4 cup water
- 1 tub Knorr® Homestyle Stock - Chicken
- 2 Tbsp. finely chopped fresh parsley , (optional)
- 8 ounces angel hair pasta , cooked and drained
