Italian Club Finger Sandwiches

Trim the crusts from the bread, if you want to
- 6 thin slices white bread
- 1 cup soft, spreadable herb cheese, such as Alouette
- 8 slices prosciutto di Parma
- 12 fresh arugula or basic leaves (spicy vs. sweet)
- 2 plum tomatoes, thinly sliced
- Salt
- 2 radishes
- Toothpicks
Bacon, Leek, Tomato, and Potato Soup

Heat a medium soup pot or deep-sided skillet over medium-high heat
- EVOO
- 6 slices lean, smoky bacon, chopped into 1/2 inch pieces
- 3 small celery ribs from the heart, finely chopped
- 2 small or medium carrots
- 3 leeks, trimmed of rough tops and root ends
- 1 bay leaf
- Salt and black pepper
- 3 medium-sized starchy potatoes, such as Idaho, peeled
- 2 quarts chicken stock
- 1 15-ounce can petite diced tomatoes, drained
- A handful of fresh flat-leaf parsley leaves, finely chopped
- Crusty bread for dunking
BLCC Dessert

Arrange the sponge cakes on a serving dish
- 4 small individual sponge cakes
- 1 jar prepared lemon curd
- 1/2 pint raspberries
- 1 canister whipped cream
- 2 tsp lemon zest
Wingless Buffalo Chicken Pizza

Preheat oven to 425'F. Preheat a grill pan over high heat
- 3/4 pound chicken breast cutlets
- EVOO
- 2 tbsp grill seasoning
- 1 pizza dough
- Cornmeal or flour
- 2 tbsp butter
- 1 tbsp Worcestershire sauce
- 2-3 tbsp hot sauce
- 1/2 cup tomato sauce
- 1 cup shredded Monterey jack cheese
- 1/2 cup crumbled blue cheese
- 3 scallions, thinly sliced
Chicken Parm Pizza

Preheat the oven to 425'F
- Cornmeal or flour
- 1 pizza dough
- 2 tbsp EVOO
- 1 pound ground chicken
- 3 garlic cloves
- 1 small onion, chopped
- Salt and black pepper
- Handful of fresh flat-leaf parsley leaves, chopped
- Red pepper flakes
- Dried oregano
- 1 8-ounce can tomato soup
- 1 cup grated Parmigiano-Reggiano cheese
- 1 1/2 cups shredded Provolone cheese
- 5 or 6 fresh basil leaves, shredded or torn
Cake and Berries with Melted Ice Cream Sauce

Mix the berries together with the sugar in a bowl
- 1/2 pint strawberries, sliced
- 1/2 pint blueberries or blackberries
- 2 tsp sugar
- 1/2 loaf pound cake, cut into cubes
- 2 cups strawberry or vanilla ice cream
Texas Hold-Ums With Fire-Roasted Ketchup

Preheat a grill pan until very hot
- 2 pounds ground sirloin
- 1 medium onion, peeled and cut in half
- 2 tbsp Worcestershire sauce
- 2 chiptles in adobo, chopped
- 2 tbsp of the adobo sauce
- 2 tbsp grill seasoning
- 1 tbsp EVOO
- 3 garlic cloves, finely chopped
- 3 tbsp brown sugar
- 1/4 cup vinegar
- 1 15-ounce can crushed fire-roasted tomatoes
- Salt and black pepper
- 12 1/2 -inch-thick slices smoked cheddar or sharp cheddar
- 12 small round rolls, split (preferably mini)
Spaghetti alla Ceci

- Salt
- 1 pound Spaghetti
- 3 tbsp EVOO
- 1/2 tsp red pepper flakes
- 3-4 garlic cloves, finely chopped
- 1 14-ounce can chickpeas, drained
- 1/2 tsp dried thyme
- Black pepper
- 1/2 cup chicken stock
- 1 14-ounce can crushed tomatoes
- A handful of fresh flat-leaf parsley
- Grated Parmigiano-Reggiano cheese for the table
French Bread Pizzas

- 4 large garlic cloves, finely chopped
- Salt and black pepper
- Tomato sauce
- 1 tbsp fresh thyme leaves, chopped
- 1 24-inch loaf of crusty French bread
- 3 cups shredded Parmessian cheese
