Cheesy Corn Cakes with Spicy Avocado Salsa - Simply Delicious— Simply Delicious

Sometimes, words just aren’t enough to convey exactly how much I really love a specific dish
- canapes with drinks.
- Makes approximately 15 corn cakes, depending on size
- 2 cups corn
- 1 x 400g (14.11 ounces) tin creamed corn
- 2 eggs
- 1 1/2 cups grated mature cheddar
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 cup milk
- for the spicy avocado salsa
- 2 avocados, chopped
- 1 small red onion, peeled and finely chopped
- 1 red chilli, finely chopped (remove seeds if you don’t like it hot)
- juice of 1/2 lemon
- salt & pepper to taste
- fresh coriander, to serve
Spicy Chicken Soup

Combined all ingredients and cook in crock-pot for 6-8 hours on low
- 1 (16 ounce) jar mild chunky salsa
- 2 (14.5 ounce) cans peeled and diced tomatoes
- 2 (14.5 ounce) cans chicken broth
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons dried parsley
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 2 tablespoons olive oil
- 1 onion, chopped or 2 T. dehydrated minced onion
- 3 cloves garlic, chopped
- 1 (15 ounce) bag frozen corn
- 2 (16 ounce) can black beans, undrained
- 8 skinless, boneless chicken breast halves (can be added frozen)
Broccoli Salad

- 4 slices bacon
- Kosher salt
- 1 pound broccoli crowns, cut into florets (3 crowns)
- 1 quart cherry tomatoes
- 1/2 cup roughly chopped roasted almonds
- 1/2 cup dried cranberries
- 1/2 cup edamame
- 2 teaspoons Dijon mustard
- 2 teaspoons red wine vinegar
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
Pesto Pasta with Chicken

Bring a large pot of lightly salted water to a boil
- 1 (16 ounce) package bow tie pasta
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 2 boneless skinless chicken breasts, cut into bite-size pieces
- crushed red pepper flakes to taste
- 1/3 cup oil-packed sun-dried tomatoes, drained and cut into strips
- 1/2 cup pesto sauce
Peanut Butter Granola Mini Bars

In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended
- 1/2 cup reduced-fat creamy peanut butter
- 1/3 cup honey
- 1 egg
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 3-1/2 cups old-fashioned oats
- 1/2 cup packed brown sugar
- 3/4 teaspoon salt
- 1/3 cup peanut butter chips
- 1/3 cup miniature semisweet chocolate chips
Salsa Chicken

Preheat oven to 375 degrees F (190 degrees C) Place chicken breasts in a lightly greased 9x13 inch baking dish
- 4 skinless, boneless chicken breast halves
- 4 teaspoons taco seasoning mix
- 1 cup salsa
- 1 cup shredded Cheddar cheese
- 2 tablespoons sour cream (optional)
Kids' Favorite Pumpkin Seeds

In a small bowl, combine all ingredients; transfer to an ungreased 15-in
- 2 cups fresh pumpkin seeds
- 1/4 cup butter, melted
- 1/2 teaspoon garlic salt

Brown hamburger and onions in a very large skillet; drain
- 2 small onions, finely chopped
- 5 pounds hamburger
- 64 ounces Hunt's Tomato Paste
- 64 ounces Hunt's Tomato Pur
- 1 1/2 cups granulated sugar
- 1/3 cup cider vinegar
- 2 tablespoons chili powder
- 1 tablespoon pepper
- 1 tablespoon celery seed
- 3 tablespoons plus 1 teaspoon salt
Cinnamon Coffee Cake

Preheat oven to 350º. Coat a 10″ fluted bundt or tube pan coated with vegetable or olive oil cooking spray
- 1 cup butter, room temperature
- 2 cups sugar
- 2 teaspoons vanilla extract
- 4 eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups (16 ounces) sour cream
- 3/4 cup brown sugar
- 1 tablespoons ground cinnamon
- 1/2 cup chopped walnuts or pecans (I omitted these. I think raisins would be a great substitution.)
