  • Makes approximately 15 corn cakes, depending on size
  • 2 cups corn
  • 1 x 400g (14.11 ounces) tin creamed corn
  • 2 eggs
  • 1 1/2 cups grated mature cheddar
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • for the spicy avocado salsa
  • 2 avocados, chopped
  • 1 small red onion, peeled and finely chopped
  • 1 red chilli, finely chopped (remove seeds if you don’t like it hot)
  • juice of 1/2 lemon
  • salt & pepper to taste
  • fresh coriander, to serve

Combined all ingredients and cook in crock-pot for 6-8 hours on low

  • 1 (16 ounce) jar mild chunky salsa
  • 2 (14.5 ounce) cans peeled and diced tomatoes

  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons dried parsley

  • 1 onion, chopped or 2 T. dehydrated minced onion
  • 3 cloves garlic, chopped

  • 8 skinless, boneless chicken breast halves (can be added frozen)
