- 1 (15 ounce) can tomato sauce
- 1/4 cup water
- 1 teaspoon sugar
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil leaves
- 1/4 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 whole bay leaf
- 1/2 teaspoon lemon juice
Low Sugar Mango Sorbet (without an ice cream freezer)

In a small pan combine the water and sweetener and bring to a boil
- 2 large very ripe mangoes
- 1/2 cup water
- 1/2 cup Granulated Stevia In The Raw, Splenda, or sugar

Umbrian-Style Veal Chops

- 1/2 packed cup fresh basil leaves
- 1/2 cup extra-virgin olive oil
- 1/4 packed cup fresh mint
- 2 tablespoons chopped fresh marjoram
- 2 tablespoons white wine vinegar
- 1 tablespoon anchovy paste
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cloves garlic, smashed
- Juice from 1 large lemon (about 1/4 cup fresh lemon juice)
- 1/2 small red onion, roughly chopped
- 3 tablespoons extra-virgin olive oil

Creamy Pesto Pinwheels

- 8 thin slices white or whole-wheat sandwich bread, crusts removed
- 3 ounces cream cheese, at room temperature
- 2 tablespoons unsalted butter, at room temperature
- Salt and pepper
- 1/2 cup prepared pesto

In a large mixing bowl, combine crushed cookies and cream cheese to form a stiff dough
- 1 pound chocolate sandwich cookies, crushed
- 1 (8 ounce) package cream cheese, softened
- 1 pound vanilla-flavored candy coating, melted
KalynBaked White Fish with Pine Nut, Parmesan, and Basil Pesto Crust

(Makes 2 servings, but recipe can be doubled or tripled
- 2 white fish fillets, about 6 oz. each (I used halibut but you could use cod, tilapia, grouper, or any mild white fish)
- 3 T pine nuts
- 2 T Parmesan Cheese
- 1/4 tsp. finely minced garlic (1 garlic clove)
- 1 tsp. basil pesto (I used purchased pesto)
- 1 1/2 T mayo (use regular or light mayo, not fat-free)
Cranberry-Blue Cheese Ball

I had this at a party and it was fabulous! I couldn't stop eating it so I got the recipe and thought I would share
- 4 ounces sharp white cheddar cheese, cut into cubes
- 1 (8 ounce) package low-fat cream cheese, softened
- 4 ounces crumbled blue cheese
- 1 (6 ounce) bag dried sweetened cranberries
Tomato, Corn, and Avocado Salad

1.Stand ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels
- 1 ear corn (husk and silk removed; tip cut off)
- 2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)
- 1 avocado, halved, pitted, peeled, and diced
- 2 scallions, thinly sliced
- 2 tablespoons fresh lime juice
- 1 tablespoon vegetable oil, such as safflower
- Coarse salt and ground pepper
