Smoked Paprika Open Faced Lasagna

Heat the 2 tablespoons of oil in a wide pot over medium-high heat
- 2 tablespoons olive oil, plus 2 tablespoons extra-virgin olive oil
- 1/4 pound Mexican chorizo sausage, removed from casing
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, chopped
- 1 cup red wine
- 1 (28-ounce) can crushed Italian tomatoes
- 3 tablespoons smoked paprika, divided
- 1/2 cup panko bread crumbs
- 2 tablespoons heavy cream
- 1 tablespoon salt
- 8 lasagna noodles
- 1 cup chopped flat-leaf parsley
- 1 cup grated manchego cheese
Brandied Bacony Chicken

- Ingredients
- 1 (2 1/2 to 3-pound) chicken
- 2 rashers (strips) streaky bacon
- 1/4 cup brandy
Salmon over sweet and sour cabbage

In 12-inch skillet, heat oil on medium-high
- 2 teaspoons olive oil
- 1 medium sweet onion, thinly sliced
- 1 head (small) red cabbage (2 pounds), cored and thinlysliced (8 cups)
- Salt
- Pepper
- 1/2 cup dry red wine
- 2 tablespoon balsamic vinegar
- 1/2 pint blackberries
- 4 pieces (5 ounces each) skinless center-cut salmon fillet
- Parsley leaves, chopped if desired, for garnish
Zucchini Carbonara

Directions Carbonara is a classic pasta sauce made with cream, bacon and Parmesan and is absolutely delicious
- Ingredients
- Sea salt and freshly ground black pepper
- 6 medium green and yellow zucchini
- 1 pound penne
- 4 large free-range or organic egg yolks
- 1/2 cup heavy cream
- 2 good handfuls freshly grated Parmesan
- Salt and freshly ground black pepper
- Olive oil
- 12 thick slices pancetta or lean bacon, cut into chunky pieces
- A small bunch fresh thyme, leaves picked and chopped, flowers reserved (if you can get hold of flowering thyme)
- Optional: a few zucchini flowers
Zucchini Taco Roll-Ups

Preheat oven to 400 degrees F
- INGREDIENTS
- 2 tbsp. extra-virgin olive oil
- 1 medium yellow onion, chopped
- 1 jalapeno, minced
- 1 lb. ground beef
- kosher salt
- 2 tbsp. Taco Seasoning
- 1 1/2 c. grated Monterey jack, divided
- 1 1/2 c. grated cheddar, divided
- 1/4 c. sour cream
- 1 (15-oz.) can fire-roasted crushed tomatoes
- 4 medium zucchini, sliced 1/8” thick
- Cilantro, chopped, for garnish
Two Lettuce Salad

Whisk lemon juice and olive oil together and pour over rest of ingredients
- 1 head Butter Crisp lettuce
- 1 head Red Oak leaf lettuce
- 1 sweet red pepper diced
- 2 cucumbers sliced
- 3 oz goat cheese
- Dressing
- 2 T lemon juice
- 2 T olive oil
- Salt & Pepper
Marinara Sauce

- 1 small onion, finely chopped
- 1 garlic clove, finely chopped
- 1 celery stalk, finely chopped
- 1 carrots, peeled and finely chopped
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 (32-ounce) cans crushed tomatoes
- 1 dried bay leaves
Pea and Basil Soup

- Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 pounds (about 4 1/2 cups) frozen peas
- 3/4 cup chopped fresh basil leaves
- 2 cups chicken broth, divided
- 2 cups cream
- 4 to 6 very thin slices fresh mozzarella cheese
- 1/4 cup diced roasted red bell peppers (jarred is fine)
Squash Casserole

- Water
- 2 lbs. yellow squash, sliced
- 1 medium onion, sliced
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 tbsp. melted butter, divided
- 3 tbsp. flour
- 2 eggs, slightly beaten
- 1 cup milk
- 1/2 lb. sharp cheddar cheese, grated
- 4 tbsp. plain bread crumbs
Honey Baked French Toast

This came from a magazine and I made it and it turned out great
- 4 T unsalted butter
- 3 T honey
- 2/3 cup orange juice
- 4 lg eggs
- 1/4 t cinnamon
- 1/4 t salt
- pinch of nutmeg
- 6 slices of french bread ( 1/2 to 3/4 in thick)
