Baked Coconut Shrimp

Preheat the oven to 450 degrees F
- DIPPING SAUCE:
- Nonstick cooking spray
- 1 teaspoon curry powder
- Pinch crushed red pepper flakes
- 1 tablespoon honey
- 2 teaspoons rice vinegar
- 1 orange, zested and juiced
- SHRIMP:
- 1/2 cup flaked unsweetened coconut
- 6 tablespoons plain panko breadcrumbs
- 3 tablespoons all-purpose flour
- 2 large egg whites
- 1 pound large (21/25 count) shrimp, peeled (tails left on), deveined, butterflied and patted dry
- Salt and freshly ground black pepper

- 4 Large Baking Potatoes, Baked
- 12 Slices Bacon, Cooked, Cooled, and Crumbled (or Ham)
- 2/3 C Butter
- 2/3 C Flour
- 1 1/4 C Shredded Cheddar Cheese
- 6 C Milk (2%is Better, Skim if OK)
- 8 oz. Sour Cream
- 3/4 tsp. Salt
- 1/2 tsp. thyme
- 1/2 tsp. White Pepper
- 4 Green Onions, chopped
- Grated carrots and parsley for garnish
