Gumbo - Chicken/Sausage

Cook Sausage first, take out and then cook down garlic, celery, onion pepper
- 1 bag of Roux and add portions of Savoie jar
- Gumbo File - couple dashes
- Rotisserie Chicken
- 1 pack of Andouille
- 2 Boxes Chicken Broth
- 1 Fill Water w/Broth
- 1 Big Can Stewed Tomatoes
- 1 Green Pepper
- 1 Big White Onion
- 1 Can Of Rotels
- 1 Celery Stalk
- 2 Garlics / Minced
- 1/2 chopped fresh Thyme
- 3Tbls of Creole Seasoning of choice
- Good Pour of Salt
- 1 bag of Soup Crackers
- 4 Bay Leaves
Roux Sauce

Heat oil in heavy pot or Dutch oven
- Basic Roux
- 1 Cup of All Purpose Flour
- 1 Cup of Oil or Margarine
Basic Brown Sauce

Use pan drippings (remove excess fat) of meat or game
- Pan Drippings
- 1 Tblsp chopped green onions
- 1 Tblsp parsley, minced
- All purpose flour
Spinach - Broccoli

Place frozen spinach in container and cover with water
- 1 Package Chopped Spinach
- 2 Cups Chopped Broccoli
- 1 Can (10oz) of Cream of Mushroom Soup, undiluted
- 1/2 Cup of Mayonnaise
- 1 Egg, well beaten
- 1/2 Tsp of Pepper
- 1/4 Tsp of Salt
- 1/4 Tsp of Garlic Powder
Sausage Potato Soup

Brown sausage in a dutch oven over medium heat, stirring until crumbly and no longer pink
- 1/2 ½ lb Italian sausage
- 16 oz frozen hash browns (4 cups)
- 1 large onion, chopped
- 1 can 14 oz chicken broth
- 2 c water
- 1-10¾ oz can cream of celery soup
- 1-10¾ oz can cream of chicken soup
- 2 c milk
Broccoli Casserole

Cook Broccoli according to direction on box
- 2 Boxes of Frozen Chopped Broccoli
- 2 Tblsp of Butter
- 1 White Onion
- 1/2 Can of Cream of Mushroom Soup
- 1 Tsp Garlic
- 1 Tsp of Red Pepper
- 1 Tblsp of Flour
- American Cheese
- Milk (as needed for desired consistency

- 1-1/2 cups of Steel Cut Oats
- 1-1/2 cups of Rolled Oats
- 1 Cup Quick Oats for different grains
