Pan Seared Ahi Tuna with Pico de Gallo

In a medium-size non-stick pan over medium-high heat, add two tablespoons of vegetable oil
- TUNA:
- 2 ahi tuna filets - (8 oz ea)
- 2 tablespoons vegetable oil
- 1 tablespoon freshly-cracked black pepper mixed with
- 1/2 ½ tablespoon salt
- PICO DE GALLO:
- 4 Roma tomatoes diced
- 1/2 ½ small red onion finely diced
- 1 large orange peeled and sliced
- 1/2 ½ cup jicama in ¼" cubes
- Juice of ½ lime
- 1 teaspoon salt
- 1 small jalepeño pepper seeded, and finely chopped
- 1/2 ½ teaspoon cumin
- 3 tablespoons coarsely-chopped fresh cilantro
Stella Artois Pretzels

) The Stella Artois has to be hot, but not too hot (105-115F)
- 1 1/2 cups of Stella Artois beer (105-115F)
- 1 package of yeast (see picture)
- 1/2 teaspoon of sugar
- 4 cups of flour, unsifted (not self-rising or whole wheat, just plain old flour. King Arthur Flour is made with Kansas Wheat. Just sayin’.)
- 2 eggs, beaten
- 2/3 cup baking soda
- Coarse Ground Salt
Shrimp Salad

Place shrimp in a bowl. Add celery, egg, pickle, capers and mayonnaise
- 1 lb boiled shrimp, peeled, deveined and chopped
- 1 Rib Celery, finely chopped
- 1 Hard Boiled Egg, finely chopped
- 1 Sweet Pickle, finely chopped
- 1/2 Tsp mince capers
- 2 Tblsp of Mayonnaise
- Creole Seasoning
Cheese Cake

Melt Butter, and mix with vanilla wafter and sugar
- Crust:
- 3 - 8 oz of Philadelphia Cream Cheese
- 3 Eggs
- 12 Tblsp of Sugar
- 1/2 Cup of Sour Cream
- 1 Tsp of Vanilla Abstract
- 40 Vanilla Wafers
- 1/2 Cup of Sugar
- 1 Stick of Butter
Cajun Cabbage Soup

- 1 Onion - Chopped
- 3 Garlic Cloves - Chopped
- 1 Tbsp of Oil
- 1 Tbsp of Margarine
- 1/2 lb of Ham - Chopped or Shredded
- 1 Bag of Potatoes - Squared
- 2 Heads of Cabbage - Finely Chopped
- 2 Cups of Chicken Stock
- 1/4 Cup of Cilantro - Chopped
- 1/8 Cup of Green Onion - Chopped
- 1/8 Cup of Carrots - Chopped Fine
- 1 Tsp of Salt
- 1 Tsp of Pepper
