Chuckwagon Casserole

Preheat oven to 375 degrees F
- Casserole:
- 1 tablespoon of olive oil
- 1 cup of chopped onion
- 1/2 cup of chopped green bell pepper
- 1 teaspoon of minced garlic
- 1 pound of ground beef
- 1 can of red kidney beans, drained and rinsed
- 1 can of whole kernel corn, drained
- 1 can of condensed tomato soup
- 1/4 cup of milk
- 1 cup of shredded Cheddar cheese
- 1/2 teaspoon of chili powder
- 1 teaspoon of Worcestershire sauce
- 1/4 teaspoon of Cajun seasoning or cayenne pepper
- Kosher salt and freshly cracked black pepper, to taste
- Topping:
- 2 tablespoons of melted butter
- 1 (12 count) roll of refrigerated biscuits
- 1 or 2 tablespoons of cornmeal
Spinach Tomato Tortellini

Directions Bring a large pot of water to a boil
- 1 (16 ounce) package cheese tortellini
- 1 (14.5 ounce) can diced tomatoes with garlic and onion
- 1 cup chopped fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoons dried basil
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 3/4 cup milk
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
Creamy BBQ Cilantro Lime Dressing

Combine all the ingredients together and whisk (or shake, if using a jar) vigorously to combine
- 1 cup mayonnaise, light or regular
- 1/3 cup milk
- 1/3 cup buttermilk
- 2 tablespoons fresh cilantro, finely chopped
- 1 tablespoon lime juice
- 1 teaspoon white vinegar
- 1 teaspoon granulated sugar
- 1 garlic clove, finely minced
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 to 1/2 cup BBQ sauce
Tomato Bisque Soup

In large pot heat oil and cook onion, celery, and herbs
- 2 Tbsp. oil
- 1 cup chopped onions
- 1/2 cup chopped celery
- 1/2 - 2 tsp. fresh basil
- 1/2 - 2 tsp. dill
- 1/2 tsp. garlic salt
- 2 cup chopped fresh tomatoes (1 - 28 oz can diced tomatoes, drained)
- 1 Tbsp. sugar
- 1 tsp. salt
- Pepper to taste
- 2 cups chicken stock
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk (half & half)
Creamy Vegetable Soup

A nice creamy vegetable puree soup
- 1/2 tbsp ground basil
- 1/8 tsp pepper
- 2 cups chicken stock, low sodium
- 1/2 medium carrot, sliced
- 2 cloves garlic, minced
- 1/4 cup chopped onions
- 1 tbsp fresh parsley, chopped
- 1 1/2 cups sliced zucchini
- 1/2 cup chopped or sliced tomatoes
Cinnamon Sugar Pull Aparts

Preheat oven to 400 degrees
- 1/2 c. sugar
- 2 1/2 tsps. cinnamon
- 1/3 c. butter, melted
- 1 can (12 oz) refrigerated buttermilk flaky biscuits
White Chocolate Golden Oreo Crunch Cookies

- 3 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 sticks softened butter
- 3/4 cups sugar
- 3/4 cups brown sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 cup white chocolate chips
- 20 Golden Oreos, crushed

- BROWNIE:
- 4 ounces unsweetened chocolate, finely chopped
- 1 cup salted butter, melted
- 2 cups light brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 cup mini- chocolate chips
- Can also use brownie mix
- COOKIE DOUGH (EGG FREE!):
- 3/4 cup salted butter, at room temperature
- 3/4 cup light brown sugar, packed
- 3/4 cup granulated white sugar
- 3 Tablespoons milk
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 cups mini chocolate chips
- 1/2 cup semisweet chips + 1 teaspoon shortening for drizzle, optional
