Chocolate Blackout Cake

Be sure to give the pudding and the cake enough time to cool or you'll end up with runny pudding and gummy cake
- Pudding:
- 1 1/4 C Granulated Sugar
- 1/4 C Cornstarch
- 1/2 tsp Salt
- 2 C Half-and-Half
- 1 C Whole Milk
- 6oz Unsweetened Chocolate, chopped
- 2 tsp Vanilla
- Cake:
- 8 Tbl Unsalted Butter, plus extra for pans
- 1 1/2 C Unbleached All-Purpose Flour, plus extra for pans
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 C Dutch-Processed Cocoa
- 1 C Brewed Coffee
- 1 C Buttermilk
- 1 C Packed Light Brown Sugar
- 1 C Granulated Sugar
- 2 large Eggs
- 1 tsp Vanilla Extract

1. Line 13x9-inch pan with foil so edges of foil extend over sides of pan; spray with cooking spray
- 1 1/2 cups chocolate cookie crumbs (from 15-oz package)
- 1/4 cup sugar
- 6 tablespoons butter or margarine, melted
- 2 packages (8 oz each) cream cheese, cubed, softened
- 1/3 cup green crème de menthe liqueur
