Beef Daube Provencal

This classic French braised beef, red wine, and vegetable stew is simple and delicious
- 2 teaspoons olive oil
- 12 garlic cloves, crushed
- 1 (2-pound) boneless chuck roast, trimmed and cut into 2-inch cubes
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 1 cup red wine
- 2 cups chopped carrot
- 1 1/2 cups chopped onion
- 1/2 cup less-sodium beef broth
- 1 tablespoon tomato paste
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- Dash of ground cloves
- 1 (14 1/2-ounce) can diced tomatoes
- 1 bay leaf
- 3 cups cooked medium egg noodles (about 4 cups uncooked noodles)
Doughnut Muffins

To make the muffins Put a rack in the middle of the oven and heat the oven to 350°F
- For the muffins:
- 12 oz. (24 Tbs.) unsalted butter, warmed to room temperature
- 1-3/4 cups sugar
- 4 large eggs
- 1 lb. 11 oz. (6 cups) all-purpose flour
- 1 Tbs. plus 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1-3/4 tsp. salt
- 1 tsp. ground nutmeg
- 1-2/3 cups milk
- 1/4 cup buttermilk
- For dipping:
- 8 oz. (16 Tbs.) unsalted butter; more as needed
- 2 cups sugar
- 2 Tbs. ground cinnamon
Chocolate Mousse Pie

Preheat oven to 400. Bake pie crust according to package directions
- 1 9" prepackaged Pie Crust
- 2 1.4oz pkgs Sugar-Free, Fat-Free Chocolate Pudding Mix
- 1 1/4 C Fat-Free Milk
- 1 8oz container Fat-Free Whipped Topping, divided
- 2 Tbl mini Semi-Sweet Chocolate Chips
Fresh Tortellini with Mushrooms and Pancetta

If you can't find cremini mushrooms, sliced button mushrooms will work fine
- 1 (9-ounce) package fresh cheese tortellini (such as DiGiorno)
- 3 ounces pancetta, diced
- 1 cup prechopped onion
- 1 teaspoon bottled minced garlic
- 1 (8-ounce) package presliced cremini mushrooms
- 2 cups bagged baby spinach
- 1 cup organic vegetable broth (such as Swanson Certified Organic)
- 1/2 cup sun-dried tomato bits
- 1/4 teaspoon black pepper
- 1/4 cup (1 ounce) preshredded Parmesan cheese
Crunchy Baked Flounder

Preheat oven to 425°F. Mist bottom of a large baking dish with nonstick cooking spray
- 1/2 cup panko
- 1/2 cup grated Parmesan
- 3 tablespoons unsalted butter, melted
- 4 flounder fillets (1 1/2 lb.)

Chocolate Peanut Butter Martini

Blender all ingredients (PB, Chocolate Syrup, Chocolate Liqueur, Vodka & Ice) in a blender Drizzle some chocolat
- 1/2 cup peanut butter
- 4 TBSP chocolate syrup
- 5 oz. chocolate liqueur
- 4 oz. vodka
- 3 cups of ice
- extra chocolate syrup for the glass
- whipped cream (regular or alcohol infused)

- 2 cups long grain rice like Texmati
- 3 Tablespoons extra-virgin olive oil
- 1 leek, white and light green part only, halved and sliced
- 1 pound shiitake mushrooms, cleaned and sliced
- 1/2 cup dry white wine
- 1/4 cup chopped flat-leaf parsley
- kosher salt and freshly ground black pepper, to taste
- 4 teaspoons good quality white truffle oil
