Ramen Noodles From Scratch

1. Stir the flour and wheat gluten together in a large mixer bowl
- Serves 4. For big eaters like my family, this recipe easily doubles, triples, quadruples, etc…
- 2 cups all purpose flour (300 grams)
- 2 tbsp vital wheat gluten (15 grams)
- 1/2 cup warm water
- 1 tsp Koon Chun Potassium Carbonate & Sodium Bi-Carbonate (kansui)
Bok Choy Salad

In a small bowl, whisk together the vinegar, oil, sugar and soy sauce
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/2 cup white sugar
- 1 tablespoon soy sauce
- 1/4 cup margarine
- 1/4 cup blanched slivered almonds
- 1/4 cup sesame seeds
- 2 (3 ounce) packages ramen noodle pasta, crushed
- 1 medium head bok choy
- 3 green onions
Turkey and Hot Sausage Chili

- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 1 pound/12 ounces hot Italian sausage, removed from casings and crumbled
- 2 teaspoons Essence, recipe follows
- 1 1/2 cups chopped yellow onions
- 1/2 cup chopped green bell peppers
- 1/2 cup chopped, roasted and peeled green poblano or Anaheim chiles
- 2 tablespoons minced garlic
- 2 tablespoons chili powder
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1 (12-ounce) lager beer
- 1 (28-ounce) can chopped tomatoes with their juice
- 2 15oz cans red kidney beans, drained
- 1/4 cup chopped fresh cilantro leaves
- 2 cups grated cheese, garnish
- Tortilla chips.
New York-Style Pizza Sauce

This pizza sauce is easy to make and tastes better than store-bought
- 1 (14 1/2 ounce) can diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons chopped fresh basil (or 2 t. dried)
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons sugar
- 1/2-1 teaspoon minced garlic
- 3/4 teaspoon salt (or 1 1/2 t. kosher salt)
Eggplant -- Easy, Good and Tasty

Directions Preheat oven to 375 degrees F (190 degrees C)
- 1 tablespoon olive oil
- 1/3 large eggplant
- 1 egg
- 1 tablespoon water
- 1 cup dry bread crumbs
- 1 tomato, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian-style salad dressing
Eggplant Rollatini

Directions Dip the eggplant slices in egg, then coat with bread crumbs
- 1 eggplant, peeled and cut lengthwise into 1/4 inch slices
- 1 egg, beaten
- 1 cup Italian seasoned bread crumbs
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 10 slices prosciutto
- 1 (14 ounce) jar spaghetti sauce
- 2 cups shredded mozzarella cheese
- 1 (8 ounce) package angel hair pasta
Jäger Kohl (Hunter's Cabbage)

In a large skillet over medium heat, brown kielbasa and bacon
- 1 lb kielbasa, cut into 1/2 inch slices
- 4 slices bacon, cut into 2 inch pieces
- 3 large potatoes, thickly sliced (I use red potatoes)
- 1 small head of cabbage, cut into thin wedges (or more, if desired)
- 2 tablespoons flour
- salt & pepper
- 1 tablespoon cider vinegar (I use cider vinegar) or 1 tablespoon red wine vinegar (I use cider vinegar)
- 4 tablespoons sour cream, to garnish
- caraway seed, if desired to garnish (optional)
Carne Asada

Carne Asada, or “roast meat” is a Mexican dish that’s commonly associated with barbecues
- 1 skirt steak or 2 hanger steaks
- marinade
- juice of 1 limes
- 1/4 C olive oil
- 1/4 C minced cilantro
- 1-2 Serrano chillies minced (to taste)
- 1 Tbs minced garlic
- 1 tsp sugar
- 1/2 tsp ground coriander seed
- 1/2 tsp Mexican oregano
- 1/4 tsp ground cumin seed
- 2 tsp kosher salt (less if using table salt)
- black pepper to taste
- 1 Tbs pureed kiwi (optional)
- garnish
- 1/4 C sweet onions minced
- 1/4 cilantro minced
- 1 batch of homemade tortillas
Hot and Sour Soup

Directions Put the wood ears in a small bowl and cover with boiling water
- 4 dried Chinese fungi (about 1 ounce), such as wood ears or cloud ears
- 2 tablespoons canola oil
- 1 -inch piece fresh ginger, peeled and grated
- 1 tablespoon red chile paste, such as sambal oelek
- 1/2 cup canned bamboo shoots, sliced
- 1/4 pound barbecued pork, shredded
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 teaspoon salt
- 1 teaspoon ground white pepper
- Pinch sugar
- 2 quarts Chinese Chicken Stock, recipe follows
- 1 square firm tofu, drained and sliced in 1/4-inch strips
- 3 tablespoons cornstarch mixed with 1/4 cup water
- 1 large egg, lightly beaten
- Chopped green onions and cilantro leaves, for garnish
- 1 (4-pound) whole chicken
- 1 bunch green onions, halved
- 4 garlic cloves, smashed
- 3 -inch piece fresh ginger, whacked open with the flat side of a knife
- 1 onion, halved
- 1 teaspoon whole white peppercorns

German Ham Hock with Sauerkraut

Directions Add all ingredients including the Sauerkraut into pot
- smoked ham hock/s (I used about 1 1/2 lbs, but larger pieces can be used)
- Sauerkraut (I used about 3/4 of a 1 qt /946 ml glass of Sauerkraut)
- 1 large onion, chopped
- 1 large carrot or several baby carrots, chopped
- 3 allspice berries
- 5 pepper corns
- 1 bay leaf
- 4 tsp salt
- 6 cups water, or as needed
