Hot Spinach and Artichoke Dip

Directions Preheat oven to 400 degrees F (200 degrees C)
- 8 slices bacon
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1 (14 ounce) can quartered marinated artichoke hearts, drained
- 1 (5 ounce) container garlic-herb flavored cheese spread
- 1 cup grated Parmesan cheese
- 1 (8 ounce) container sour cream
- 1/2 cup mayonnaise

Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon dry sherry
- 2 tablespoons water
- 1 teaspoon vegetable oil
- 1 dash sesame oil
- 1 pound skinless, boneless chicken breast meat - cubed
- 1 cup chicken broth
- 1 cup white sugar
- 2 tablespoons distilled white vinegar
- 2 tablespoons dark soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon chile paste
- 1 clove garlic, minced
- 1/4 cup cornstarch
- 1/2 cup water
- 1 quart olive oil for frying
- 2 tablespoons toasted sesame seeds
Garlic Oyster Linguini

In a small saucepan, melt 2 tablespoons butter or margarine
- 1/4 cup butter
- 8 ounces fresh mushrooms, quartered
- 1 teaspoon Cajun seasoning
- 1 teaspoon minced garlic
- 24 shucked oysters, quartered
- 1/2 cup whole corn kernels, blanched
- 2/3 cup French-style green beans, chopped
- 2 tablespoons chopped pimento peppers
- 1/2 cup seafood stock
- 10 ounces fresh linguine pasta
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 tablespoons chopped fresh parsley
- 3 tablespoons thinly sliced green onion
- 4 ounces crabmeat

Instructions Position rack in the lower third of oven and preheat the oven to 425ºF
- 1 double or triple recipe of the gravy (optional)
- 1 cup reduced-sodium chicken broth
- 4 tablespoons (1/2 stick) unsalted butter, softened at room temperature
- 1 teaspoon Baby Bam
- 1 bay leaf
- 5 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- 1 rib celery, coarsely chopped
- 1 carrot, peeled and coarsely chopped
- 1 medium yellow onion, coarsely chopped
- 3/4 teaspoon ground black pepper
- 1 1/2 teaspoons salt
- 1 (10- to 12-pound) turkey
Szechuan Beef with Broccoli

This recipe for Szechuan Beef with Broccoli is very easy to make and is delicious over white rice
- 1 tablespoon peanut oil (or vegetable/canola oil)
- 1/2 teaspoon ground ginger
- 1 clove garlic, minced
- 1 cup broccoli florets, must be fresh to stir fry and not get soggy
- 4 ounces thin sliced stir fry beef
- 1 teaspoon chili paste
- 1 teaspoon soy sauce
- 1 teaspoon brown sugar
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon salt
- 1 teaspoon coarse ground black pepper
- Pinch sesame seeds (option, for garnish)
Caldo de Res — Mexican Beef and Vegetable Soup

1.Heat oil in large, heavy-bottomed pot and brown meat and bones on all sides, about 15-20 minutes
- 2 tablespoons olive oil
- 2 lbs. (1 kilo) shank and soup bones, thinly sliced
- 2 quarts water plus more as needed
- 2 teaspoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 1 potato, peeled and cubed
- 1/8 head of small cabbage, chopped
- 1 ear of corn, husked and cut into 4-6 pieces, or slice off kernals
- 1/2 teaspoon dry Mexican oregano
- 1 tomato, chopped
- 1 tablespoon fresh herbs, such as basil, mint, epazote, minced
- salt and freshly ground black pepper to taste
