- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered
Shredded Crispy Beef

Cut beef into thin shreds
- Beef:
- 14oz rump or sirloin steak, trimmed
- 2 eggs, beaten
- 1/2 tsp salt
- 4tbsp cornstarch
- oil for deep-frying
- 2 carrots, finely shredded
- Sauce:
- 2 spring onions, shredded
- 1 garlic clove, finely chopped
- 2 red chilies, shredded
- 1/3 cup sugar
- 3 tbsp black rice vinegar
- 2 tbsp soy sauce
Hazelnut Dukka

Preheat oven to 350 Spread hazelnuts in a pie plate and toast 12 minutes, until fragrant and skins blister
- 1/2 cup hazelnuts
- 6 tbsp coriander seeds
- 3 tbsp cumin seeds
- 1/4 cup sesame seeds
- 1/2 cup roasted pistachios
- 1/4 tsp cayenne pepper
- salt and pepper
Focaccia Dough

- 3/4 Cup Water
- 2 Tablespoons Oil
- 2 Cups of Flour
- 1 Tablespoon Sugar

Gingered Stir-Fry with Shrimp and Snow Peas

RECIPE—Large nonstick skillets that can create a sear are ideal for stir-fries
- 1/2 Cup chicken stock
- 2 tbsp soy sauce
- 1 tsp chile-garlic sauce
- 1 tsp cornstarch
- 2 tbsp veg oil
- 1/4 cup ginger, cut into fine matchsticks
- 1/2 lb snow peas
- 1 lb medium shrimp
- 4 small scallions, thinly sliced

- 2 medium zucchini (about 7 ounces each), coarsely shredded
- 2 garlic cloves, very thinly sliced
- 3 large scallions, very thinly sliced
- 1/2 cup fresh sheep-milk ricotta cheese
- 2 large eggs
- 2 teaspoons finely grated lemon zest
- Kosher salt and freshly ground pepper
- 3/4 cup all-purpose flour
- Olive oil, for frying
- Lemon wedges, for serving
Thai Curry Rice - for Stuffed Peppers

This is a stuffed peppers recipe, however; the thai rice is great by itself as a side dish for other meals
- 4 large bell peppers
- 2 tablespoons unsalted butter or grapeseed oil
- 2 medium shallots, minced
- 4 garlic cloves, minced
- Salt
- 3/4 cup long-grain white rice
- 1/2 cup unsweetened coconut milk
- 1 tablespoon minced fresh ginger
- 1 tablespoon Thai red curry paste
- 1 large jalapeño, finely chopped with seeds
- 3/4 pound oyster mushrooms, cut into 1/2-inch pieces
- 4 cups chopped spinach
- 1/4 cup chopped Thai basil, plus more for garnish
- 1 tablespoon fresh lemon juice
Potatoes - Crispy w/Cumin

Put potatoes in a pot of cold water to cover
- 1.5 lbs boiling potatoes, scrubbed w/skin on
- 3 tbsp canola oil
- 2 tsp cumin seeds
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cayenne pepper
Mole Verde

In an electric coffee grinder or spice mill, or in a mortar, grind the whole cloves and cumin together
- 8 whole cloves, or 1/4 teaspoon ground cloves
- 1 teaspoon cumin seeds
- 3 jalapeÑo chiles
- 6 large tomatillos, husks removed
- 1 small onion, cut into chunks
- 5 garlic cloves
- 2 fresh thyme sprigs
- 2 fresh marjoram sprigs
- 6 cups chicken or pork stock
- 1 cup (8 ounces) fresh masa, or 6 tablespoons masa harina mixed to a smooth paste with 1 cup water
- 1 medium-size bunch flat-leaf parsley
- Eight 6-inch sprigs of fresh epazote or 1/4 cup crumbled dried epazote
- 3 large or 5 medium fresh hoja santa leaves, or 5 dried leaves
