Baken Beans - Honey-Rum Black

Drain beans, place them in a large saucepan and add cold water to cover by 2 inches
- 12 oz dried black beans, soaked for 8 hours in cold water.
- 1 tbsp canola oil
- 1/2 pound chorizo sausage, diced
- 1 medium Spanish onion, finely diced
- 1 medium carrot, diced
- 4 cloves garlic, finely chopped
- 1 cup dark rum
- 1/4 cup honey, or more to taste
- 3 tbsp molasses, or more to taste
- 3 tablespoons dark brown sugar
- Salt and freshly ground pepper
- 2 cups homemade chicken stock or low-sodium canned chicken broth
- 1 cup BBQ sauce (optional homemade in directions)
- 1/4 cup chopped fresh cilantro leaves, optional
Braised Lamb Shank w/herbs

Season shanks with salt/pepper
- 6 Lamb Shanks
- 0.5 tsp kosher salt
- 0.5 tsp freshly ground pepper
- 2 tbsp EVOO
- 2 spanish onions (2 cups), chopped
- 3 large carrots (2 cups), peeled and cut into 1/4-in rounds
- 10 garlic cloves, minced
- 1 bottle red wine (Rhone if possible)
- 28-oz can crushed tomatoes, with juice
- 2 10.5 oz cans of beef stock
- 2 tsp rosemary
- 1 tsp herbes de provence
Curry stuffed flatbreads

- For Flatbread:
- 2 cups warm water
- 2 tsp yeast
- 4.5 to 5 cups flour
- 2 tsp salt
- For Curry:
- 1 onion, finely diced
- 1 pound red potatoes, diced
- 4 garlic cloves, minced
- 1 tsp fresh ginger, minced or grated
- 2 tsp cumin
- 2 tsp garam masala
- 1/4 tsp cayenne pepper
- 3 tsp salt
- 28oz can of diced tomatoes
- 15oz can of chickpeas, drained and rinsed

- 3 Tbsp Extra-Virgin Olive Oil
- 3 pounds Trimmed Boneless Pork Shoulder, cut into 3-inch pieces

- 3 ounces Pancetta Or Thin-Cut Bacon, diced ¼inch X ¼inch

- 2 tbs mild curry powder
- 1-2 tbs peanut oil
- 3-4 tbs potato flour (or plain flour)
- vegetable oil for deep frying
- Curry Sauce:
- 3 tbs peanut oil (use ghee if you prefer)
- 4 cardamom pods, crushed and pods removed
