Baked Cod with Mango Salsa

Preheat oven to 400 degrees Fahrenheit
- 4 cod filets, frozen or fresh
- Paprika
- salt and pepper to taste
- Mango Salsa1 mango, peeled and diced
- 1/4 cup red pepper, diced
- 1 tablespoon green onions, chopped
- 1 tablespoon fresh cilantro, minced
- 1 tablespoon fresh lime juice
Crown Roast of Pork with Apple Stuffing

This pork roast with an apple dressing is amazing and plan on serving it this Christmas
- STUFFING:
- 6 slices firm white sandwich bread, cut into 1-inch squares
- 3/4 stick (6-tablespoons) unsalted butter
- 1/2 cup onion, finely chopped
- 1/2 cup celery, including some leaves, finely chopped
- 1 1/2 pound tart apples such as Granny Smith, peeled and cut into 1/4-inch-thick wedges
- 1/3 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chopped fresh sage or 1/4 teaspoon dried sage
- 1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
- 1/4 teaspoon freshly grated nutmeg
- Pinch of cinnamon
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- ROAST:
- 1 (9- to 11-pound) crown roast of pork, rib ends Frenched
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/3 pound sliced bacon
- PAN SAUCE:
- 1 1/2 cups water
- 1/4 cup red-currant or apple jelly

lace the yogurt in a cheesecloth or paper towel-lined sieve and set it over a bowl
- 1 pound (1 pint) plain yogurt (whole milk or low fat)
- 1 hothouse cucumber, unpeeled and seeded
- 1 tablespoon plus 1/2 teaspoon kosher salt
- 1/2 cup sour cream
- 1 tablespoon Champagne vinegar or white wine vinegar
- 2 tablespoons freshly squeezed lemon juice (1 lemon)
- 1 tablespoon good olive oil
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons minced fresh dill
- Pinch freshly ground black pepper

- 6 T corn starch
- 1/4 t salt
- 1/2 c cold water
- 1/2 C fresh lemon juice
- 3 well beaten egg yolks
- 2 T softened butter
- 1 1/2 C boiling water
- 1 t grated lemon peel
- MERINGUE
- 1/2 C water
- 1/4 t cream of tartar
- 1 C sugar
- 3 well beaten egg whites
Chocolate Chip Cookie Trifle

- I pkg. low fat chocolate chip cookies (Chips Ahoy)
- 2 cups skim milk
- 3 small cartons fat free cool whip (8 oz each)

Combine all ingredients thoroughly
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Fennel Crusted Salmon Braised with Pinot Noir

In a spice grinder combine the fennel, coriander, peppercorns, 2 t salt and lemon zest, grind until a fine powder
- 1 T fennel seeds
- 1 T corriander seeds
- 1/4 t black pepper corns
- 1 t freshly grated lemon zest
- Salt
- 4 six ounce skinnless salmon filets
- 3 T EVOO
- 2 Medium leeks white and light green parts only, halved length wise
- 1 medium fennel bulb thinkly sliced, 2 T of fronds chopped
- 1/2 C dry red wine
- 1/2 C chicken stock
Raspberry Peach white Sangria

- 1 C raspberries
- 12 oz frozen peaches
- 1 apple cored and sliced
- 1/3 C raspberry liquor
- 1/2 C rum
- 1 bottle moscato de aste

- 1/4 cup thick steak sauce
- 1/2 cup olive oil
- 2 tablespoon honey
- 2 teaspoons apple cider vinegar
- Kosher salt and fresh ground pepper
- 8 (1/2-inch) eggplant slices, purged with salt
- 1 cup grated Parmesan
- 3 tablespoons chopped parsley, optional
