Tuscan Vegetable Ragout

For a heartier dish, add diced and browned tofu or serve with gluten-free pasta
- 2 tsp olive oil
- 3 cloves garlic, minced
- 2 zucchini, halved lengthwise and cut in 1/2-inch slices
- 1x8 oz can diced tomatoes, undrained
- 2x15.5 oz cans cannellini beans, drained and rinsed
- 1x15 oz can artichoke hearts, quartered
- 2 Tbsp coarsely chopped Kalamata olives
- 1 Tbsp capers, coarsely chopped
- 1/4 cup fresh parsley or basil
- Salt and pepper to taste

- 3 cups milk
- 2 cups liquid egg whites
- 3 Tbsps honey
- 1 1/2 tsps vanilla extract
- 1/4 tsp salt
- 1 x1 pound loaf sliced whole wheat bread
- 1 cup chopped dried apple rings
- 1/2 cup raisins
- 1 1/2 tsps ground cinnamon
- 1/2 tsp ground nutmeg
- 1 Tbsp confectioners' sugar
Apple Crisp

Combine second set of ingredients
- 2 qts. sliced apples
- 1 c. sugar
- 2 tbsp. flour
- 1 tbsp. lemon juice
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- (Mix together and spread in 9 x 13 pan)
- 2 c. rolled oats
- 1 c. brown sugar
- 2/3 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg

- 2 1/2 cups/12 oz/340 g cooked quinoa, at room temperature
- 4 large eggs, beaten
- 1/2 teaspoon fine-grain sea salt
- 1/3 cup/.5 oz /15 g finely chopped fresh chives
- 1 yellow or white onion, finely chopped
- 1/3 cup/.5 oz/15 g freshly grated Parmesan or Gruyère cheese
- 3 cloves garlic, finely chopped
- 1 cup/3.5 oz /100 g whole grain bread crumbs, plus more if needed
- Water, if needed
- 1 tablespoon extra-virgin olive oil or clarified butter

- 1 can condensed milk
- 2 1/2 cups coconut

Vegan Carrot Curry Soup

Pour the vegetable broth into a soup pot and bring to a boil over medium heat
- 4 cups vegetable broth
- 2 tsps curry powder
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2 lbs carrots, peeled and chopped
- 14 oz can coconut milk
- 14 oz water
- 1 tsp chopped fresh cilantro (optional)
Healthy Chocolate Cake

Preheat over to 350 F. In a large bowl, sift all the dry ingredients together
- DRY INGREDIENTS
- 1 1/2 cups flour
- 4 Tbsp cocoa powder
- 1 cup white sugar
- 1 tsp baking powder
- 1 tsp baking soda
- WET INGREDIENTS
- 1/3 cup apple puree, or applesauce
- 1 Tbsp vinegar
- 1 tsp vanilla
- 1 cup warm water

- 7 1/2 cups powdered sugar, sifted
- 1/3 cup evaporated milk
- 1/3 cup light corn syrup
- 3 TBSP extra-virgin or refined coconut oil
- 1/4 tsp food-grade peppermint essential oil or 1 tsp peppermint extract (see Note)
- 1 1/2 pounds bittersweet or semisweet baking chocolate, chopped
- Crushed peppermint candies for sprinkling, optional

- 1/3 cup dry seasoned bread crumbs
- 2 cups bottled chunky pasta sauce
- 1 cup shredded mozzarella cheese
- 4 ounces sliced pepperoni, chopped (I use Yves vegetarian pepperoni)
