- 1/2 c peanut or any nut butter
- 3/4 tsp baking soda
- 3 Tbsp whole-wheat pastry flour (or white or a gluten free mix)
- 1/4 c white sugar
- 2 Tbsp brown sugar
- 2 Tbsp applesauce
- 1/2 tsp pure vanilla extract
Copycat Olive Garden Salad Dressing

Combine all ingredients in a bowl
- 1 packet Good Seasonings Italian Dressing Mix
- 3/4 cup oil (vegetable/canola)
- 1/4 cup plus 2 Tbsp white distilled vinegar
- 1/4 cup water
- 1/2 tsp sugar
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/2 Tbsp mayonnaise (not miracle whip)
Fresh Vegetable Soup

If you are trying to lose weight this soup is great to keep in the fridge for snacks or as an appetizer
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 medium carrots, diced
- 1 medium sweet red pepper, diced
- 1 stalk celery, diced
- 2 small zucchini, diced
- 2 cups green cabbage, shredded
- 2 cups Swiss chard, chopped
- 2 cups cauliflower, small florets
- 2 cups broccoli, small florets
- 2 tsp thyme, fresh, chopped
- 6 cups vegetable broth
- 2 Tbsp parsley or chives, fresh, chopped
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 2 Tbsp fresh lemon juice (optional)
Leeks with Mustard in Microwave

This is very quick and can be blended with mashed potatoes
- 1 leek (use the white portion and a little green only)
- 1 tsp Dijon mustard
- 4 TBSP parsley (chopped)
- 4 TBSP beef stock (or vegetarian stock)
- 1 oz butter (garlic spread is good too)
Salted Peanut Butter Cup Smoothie

Blend until smooth. To serve sprinkle with a pinch of salt
- 1 1 1 cup (250 ml) any Silk Vanilla soy or almond beverage
- 1/2 1/2 1/2 frozen banana
- 1 1 1 Tbsp (15 ml) cocoa powder
- 1 1 1 Tbsp (15 ml) peanut butter
- 1/2 1/2 1/2 cup (125 ml) ice flaked sea salt, for sprinkling
- 2 2 1 Tbsp (30 ml) protein powder and/or 1 Tbsp (15 ml) ground flax, if desired
Baked Gnocchi with Tomato and Basil

DIRECTIONS Adjust oven rack to upper-middle position and heat oven to 475 degrees
- 1 pound vacuum-packed gnocchi
- Salt and pepper
- 1 onion, chopped fine
- 1 tablespoon extra-virgin olive oil
- 6 garlic cloves, minced
- 1/8 teaspoon red pepper flakes
- 1 28-ounce can crushed tomatoes
- 1 cup water
- 1/2 cup chopped fresh basil
- 8 ounces mozzarella cheese, shredded (2 cups)
Tofu "Fish" Fillet Sandwiches

This is a wonderful vegetarian alternative to a fish sandwich, or also good as "Fish" & Chips
- 12 oz firm tofu, drained, patted dry and cut into 4 pieces
- 1 cup bread crumbs
- 1 tsp kelp powder
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp onion powder
- 1 tsp salt
- olive oil, as needed
- TARTAR SAUCE
- 1/2 cup mayonnaise
- 1/4 cup dill pickle relish
- 1 Tbsp fresh lemon juice

- 6 ounces dried whole grain elbow macaroni
- 6 cups torn fresh kale
- 1/2 cup dry white wine
- 2 tablespoons sliced green onion (1)
- 2 cloves garlic, minced
- 1 12 ounce can evaporated fat-free milk
- 3/4 cup canned pumpkin
- 1 tablespoon snipped fresh sage
- 1/2 cup finely shredded Parmesan cheese (2 ounces)
- Thinly sliced green onions (optional)
