FRESH CORN SALAD WITH BLACK BEANS AND TOMATOES

Use fresh corn, don't substitute w/ frozen or canned corn
- Dressing:
- 6 TBS EVOO
- 2 TBS fresh lime juice
- 1 TBS red wine vinegar
- 1 jalapeno, stemmed, seeded and minced
- 1 clove garlic, minced
- 1/2 tsp ground cumin
- 1/2 tsp table salt
- 1/4 tsp ground black pepper
- Salad:
- 8 ears fresh corn, husks and silks removed
- 1 pint grape tomatoes, halved
- 1 15.5 oz can black beans, rinsed and drained
- 6 scallions, sliced thin
- 2 TBS minced fresh cilantro
CHOCOLATE CHIP BANANA BREAD

1. Oven 350 degrees 2. In medium bowl stir together flour, baking powder, baking soada and salt, set aside
- 2 cups all-purpose flour, sifted
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 8 tbs butter
- 1/2 cup sugar
- 1 cup (2 med or 3 small) mashed ripe bananas
- 3 TBS sour cream or low-fat yogurt
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 1-1 1/2 cup semi-sweet chocolate chips
GRILLED CHICKEN WINGS

1. Make brine w/ water and table salt
- 2 lbs chicken wings, tips discarded, wings and drum separated
- 2 qt water
- 1/2 cup TABLE salt
- 1 1/2 tsp cornstarch
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/2 tsp oregano
- 1/2 tsp sugar

- 1 small package jello
- 3/4 cup boiling water
- Frosting:
- 1 package instant vanilla pudding
- 1/2 cup cold water
- 1-8 oz carton cool whip
- 1 tsp vanilla

- VINAIGRETTE:
- 1/4 c red wine vinegar
- 3 TBS lemon juice
- 3 TBS EVOO

- 1/2 tap dried oregano
- SALAD:
- 1 1/4 lb chicken tenders
- S AND P
- 4 6" pitas, brushed w/ olive oil, seasoned with S&P
- 5 c chopped romaine
- 1/2 c fresh mint, rough chop
- 1/4 fresh dill, rough chop
- 4 hard cooked eggs
- 1 1/2 c grape tomatoes, halved
- 1 c crumbled feta
- 1/2 c each - all thinly sliced-kalamatas, red onions, dukes, pepperoncini

1. Oven 350 degrees 2. Heat 1 TBS olive oil in a medium skillet over moderate heat
- 3 1/2 TBS olive oil
- 1 small onion, finely chopped
- 1 loaf frozen pizza dough
- 1/3 cup bottled marinara or pizza sauce
- 2 slices provolone, coarsely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup finely grated asiago
- 1 oz prosciutto, cut into thin strips
- 1/2 cup finely chopped tomato
- 1/4 cup finely grated Parmesan
- 1/2 cup fresh parsley
- 1 TBS red vinegar

Saute onion in oil in a large pot over medium heat, stirring often, until softened
- 1 cup diced onion
- 2 tablespoons olive oil
- 4 medium garlic clove -- minced
- 2 teaspoons chili powder
- 2 cups low-sodium chicken broth

- 2 6-inch corn tortillas -- torn into pieces
- 1 cup chopped tomatoes
- 1 1/2 cups frozen corn kernels -- (or fresh)
- 2 cups chopped zucchini -- (or sliced mushrooms)
- 3/4 teaspoon ground cumin
