Chickpea Curry

In a large saucepan, heat oil over medium heat
- 1 T vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 T madras curry powder
- 2 t chopped ginger root
- 1/2 t salt
- 1 can (14 oz.) diced tomatoes with juice
- 1 can (14 oz.) chickpeas, drained and rinsed
- 3/4 C water (approximately)
- 1 T freshly squeezed lime juice
- 1 1/2 t liquid honey
- 2 T chopped fresh cilantro

- 1 pkg. (12 oz.) refrigerated flaky buttermilk biscuits
